    How to make breakfast croissant sandwiches in a waffle iron? Buttery croissants filled with soft cooked eggs, deli ham and cheddar cheese are pressed in a waffle iron for the ultimate crispy, toasty, cheesy perfection!!! This Breakfast croissant sandwich just takes a homemade breakfast croissant sandwich recipe and makes it 10 times better.

    HOW TO MAKE BREAKFAST CROISSANT SANDWICHES

    You guys.... today we take buttery, flaky croissants and fill them with soft cooked scrambled eggs, thinly sliced deli ham and cheddar cheese.

    But, wait.

    We then press them in a hot waffle iron!!

    What the WHAT???

    Godiva cafe in New york has an item on the menu called "CROIFFLES". It is a croissant with different fillings (which includes both sweet and savory ones) then cooked in a  waffle iron. GENIUS, right? Wish I had come up with this idea.

    Thankfully, GODiva did!!!

    Remember these popular bakery mashup creations:

    CRONUTS = Croissant + Donuts

    BROOKIES = Brownie + Cookies

    DAGEL = Doughnut + Bagel

    and now, CROIFFLES = Croissant + Waffles

    So, how to make breakfast croissant sandwich recipe? 

    Taking inspiration from the croiffle, we make a regular breakfast croissant sandwich with scrambled eggs, ham and cheese. But, instead of baking them we smash them in a waffle iron.

    Sure, some (or should I say most) of the flaky croissant layers are lost. But, in turn it just makes a crispy, buttery ( not to mention...perfectly hand held) hot, cheesy sandwich.

    Next time you make your homemade breakfast croissant sandwich, please give this waffle method a try.

    You might actually start liking it.

    Pros and cons of making a breakfast croissant sandwich in waffle iron when compared to baking in the oven:

    Pros :

    • It gets crispy, buttery and cheesy
    • Perfect hand held
    • Grab and go breakfast

    • Got to cook one at time when compared to the batch baking in oven
    • Most of the croissant layers lost

    Step-1: Make scrambled eggs.

    Step-2: Split open a croissant in half, fill with scrambled eggs, ham and cheddar.

    Step-3: Cook in preheated waffle iron.

    Done and DONE.

    Enjoy piping hot.

    Can these breakfast croissant sandwiches be frozen? 

    Absolutely! Make sandwiches and place them on a wire rack to cool completely. Place in a zip lock bag, seal and freeze.

    To reheat - Wrap a frozen ham and cheese sandwich in paper towel, microwave for one minute ( flipping once in between) and eat hot.

    How to meal prep breakfast croissant sandwiches?

    Make sandwiches and place them on a wire rack to cool completely. Pack them into meal prep containers and store in refrigerator. When ready to eat, microwave until hot and enjoy with your favorite seasonal fruits.

    Ingredients

    • 2 large eggs
    • 2 tablespoons whole milk
    • salt and pepper, to taste
    • 1 tablespoon butter
    • 4 mini croissants
    • 2 ounces thinly sliced ham
    • 2 ounces grated cheddar cheese
    Prevent your screen from going dark

    Instructions

    • In a medium bowl whisk together eggs, milk, salt, and pepper. Melt butter in a small non-stick saute pan over medium heat. Pour egg mixture into the skillet and cook for 2-3 minutes (stirring gently) until thickened and no visible liquid egg remains. Set aside.
    • To cook sandwiches, preheat a waffle iron. 
      In the meantime, cut croissants in half and then place a slice of ham, ¼th of cheddar and cooked eggs on the bottom half. Close with the top half and place in the hot waffle iron (one at a time).
      Cook according to manufactures instructions until deep golden in color (about 2 minutes)
    • Enjoy breakfast croissants sandwiches hot. 

    Notes

    To freeze - Make sandwiches and place them on a wire rack to cool completely. Place in a zip lock bag, seal and freeze. 
    To reheat – Wrap a frozen ham and cheese sandwich in paper towel, microwave for one minute ( flipping once in between) and eat hot.

      CROIFFLES! I love this so much. We are MAKING them. I've actually been craving a breakfast sandwich like this for a while, so now I have the solution. I bet my kiddos would love them. I'm not even joking, I'm running out to buy croissants for this weekend!!!
