Godiva cafe in New york has an item on the menu called “CROIFFLES”. It is a croissant with different fillings (which includes both sweet and savory ones) then cooked in a waffle iron. GENIUS, right? Wish I had come up with this idea.

Sure, some (or should I say most) of the flaky croissant layers are lost. But, in turn it just makes a crispy, buttery ( not to mention…perfectly hand held) hot, cheesy sandwich.

How to make Breakfast Croissant Sandwiches in a Waffle Iron?
- 2 large eggs
- 2 tablespoons whole milk
- salt and pepper, to taste
- 1 tablespoon butter
- 4 mini croissants
- 2 ounces thinly sliced ham
- 2 ounces grated cheddar cheese
- In a medium bowl whisk together eggs, milk, salt, and pepper. Melt butter in a small non-stick saute pan over medium heat. Pour egg mixture into the skillet and cook for 2-3 minutes (stirring gently) until thickened and no visible liquid egg remains. Set aside.
- To cook sandwiches, preheat a waffle iron. In the meantime, cut croissants in half and then place a slice of ham, 1/4th of cheddar and cooked eggs on the bottom half. Close with the top half and place in the hot waffle iron (one at a time).Cook according to manufactures instructions until deep golden in color (about 2 minutes)
