Why You'll Love These Tilapia Tacos

These fish tacos are a texture lover’s dream—golden, crunchy, and so satisfying! They’re a healthier take on Baja-style fish tacos since the fish is baked instead of deep-fried.
The baked tilapia is also freezer-friendly, making these tacos perfect for quick, fuss-free weeknight dinners. Have frozen fish sticks on hand? Try my tacos using frozen fish sticks for an even easier option.

Best Sauce for Tilapia Fish Tacos
The creamy sauce for these fish tacos is next-level delicious—and it couldn’t be easier! Made with just two ingredients—store-bought salsa and mayonnaise—it’s rich, flavorful, and has the perfect chunky-creamy texture. So simple, yet so good taco recipe!
- Salsa: Be sure to use a salsa you truly enjoy! I personally love a spicy salsa, but feel free to go with a medium salsa if that’s more your style. Both fresh salsa from the refrigerated section or your favorite jarred variety will work perfectly.
- Mayonnaise: It adds a creamines and yumminess for the sauce! Use as much as you need!

Tilapia Tacos FAQ'S
Absolutely! We love tilapia because it’s mild, flaky, available year-round, and easy to find at most grocery stores. If you’d like to switch it up, cod, mahi mahi, halibut, or snapper are all good options for fish tacos because they have a mild flavor and hold together well when baked.
I’d skip stronger-flavored fish like salmon, swordfish, or tuna, since their bold flavors can overpower the fresh slaw, creamy sauce, and other taco toppings.
Toasting the panko first is the secret to getting that golden, crispy coating without overcooking the tilapia. Tilapia cooks quickly in the oven, usually in about 10 to 12 minutes, which isn’t enough time for plain panko to turn evenly golden brown.
Toasting the breadcrumbs in a little oil gives them a head start, so they’re already golden before they go into the oven. The oil also coats the crumbs, helping them crisp up quickly in the hot oven—almost like they’re being re-fried right on top of the fish.
Plus, pre-toasting gives you evenly golden breading. If you use panko straight from the package, the fish can be cooked through before the breadcrumbs have had enough time to brown, leaving you with a mix of pale and browned spots.

Crispy Baked Tilapia Fish Tacos
Ingredients
For the fish
- 1 ½ cups panko bread crumbs
- 1 tablespoon vegetable oil
- 2 large tilapia fillets, pat dry
- 1 egg, lightly beaten
- ¼ cup cornstarch
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
For the taco sauce
- 1 cup salsa drained if watery
- ¼ to ½ cup mayonnaise
- 1 to 2 pinches salt
For the slaw
- ¼ small head of cabbage thinly sliced
- ½ cup chopped cilantro
- ¼ small red onion
- ½ jalapeños, thinly sliced (remove seeds if needed)
- 2 teaspoons lemon juice
For the rest
- 8 corn tortillas
- Cotija cheese or queso fresco optional
- pickled red onions optional
Instructions
For the fish
- Toast panko. Add 1 tablespoon oil and 1 ½ cups panko breadcrumbs to a skillet over medium-high heat. Cook, stirring constantly, until the breadcrumbs turn deep golden and crispy. Transfer to a shallow plate and let cool slightly.
- Prep. Preheat the oven to 375° F. Spray a large baking sheet with cooking spray and set aside.
- Make batter. Add 1 egg, ¼ cup cornstarch, 1 teaspoon chili powder, 1 teaspoon garlic powder, ½ teaspoon paprika and ½ teaspoon salt to a large dish. Whisk until combined.
- Toss fish. Cut the tilapia fillets into 1-inch-thick sticks. Add them to the batter and gently toss until evenly coated on all sides.
- Dredge and bake. Work with one piece of fish at a time, coat it in the toasted breadcrumbs, gently pressing them on so the fish is coated all over. Place on the prepared baking sheet and repeat with the remaining fish. Bake for 11 to 15 minutes, or until cooked through.
For the rest
- Make sauce. In a bowl, add 1 cup salsa (drain slightly if watery), ¼ cup mayonnaise, and a pinch of salt. Stir until smooth. Taste and add more salt if needed, or a little more mayonnaise for a creamier sauce.
- Make slaw. Add the cabbage, red onion, cilantro, jalapeno, lemon juice with a pinch of salt into a bowl. Give a toss.
- Warm tortillas. Warm the tortillas in the microwave, in a skillet or over an open flame.
- Assemble. Place some slaw on a tortilla, then top with the fish, breaking it into smaller pieces if needed. Drizzle with the sauce and, if desired, finish with cotija or queso fresco and pickled onions. Enjoy!

Toppings for Tilapia Tacos
Here's a list of delicious, fresh, and flavorful toppings that pair beautifully with crispy baked tilapia fish tacos.
Quick pickled cabbage: Pickling the cabbage softens it just enough to complement the tender fish—raw cabbage can be too crunchy and overpowering. Simply toss thinly sliced cabbage with red onion, jalapeños, cilantro, a splash of lemon or lime juice, and a pinch of salt. That’s it!
Pickled red onions: It simply elevates the fish tacos. You can find a recipe for quick pickled onions in my potato tacos recipe!
Other suggested toppings:
- Thinly sliced radishes
- Chopped lettuce
- Avocado slices or guacamole
- Sour cream
- Chipotle mayo
- Fresh cilantro
- Squeezed lime wedges
- Jalapeño or serrano slices
- Pico de gallo
