Crusty bread loaded with garlic butter inside & out and ooey-gooey melted cheese...HOLY YUM.
Grilled cheese are generally classified as a kid friendly recipe, but this recipe is devoured by adults as well. Garlic bread is always one of go-to dishes for entertaining, but it tends to be too much for a small family meal so I turn towards this sandwich recipe.

Main ingredients:
Bread - Soft Italian bread, French bread, Country French, Buttermilk bread..are all great options.
Garlic butter - Unsalted butter, minced fresh garlic, garlic powder, salt and parsley.
Cheese - Mozzarella cheese
How to make garlic bread grilled cheese sandwich?

Mix room temperature butter, minced garlic, garlic powder, dried parsley and salt together. Spread on both sides of bread slices.
Place 2 slices of bread on a moderately hot cast iron skillet, cook on one side until golden, turn over, place shredded mozzarella on one slice, top with the other slice and cook until deep golden brown.
Expert tips:
Skillet - A good cast iron skillet maintains the heat and gives the bread a wonderful crust. However, a non-stick skillet will work just as fine.
Temperature - High heat will make the bread brown fast without melting the cheese fully, whereas very low heat might take forever. So, moderately hot heat is perfect for making the ultimate garlic bread grilled cheese recipe.
Cheese - This recipe has been tested with various cheese/cheese combinations - mozzarella & cheddar / cheddar / mozzarella & parmesan / cheddar and Monterey jack. We found that just mozzarella paired extremely well with the garlic butter toasted bread. However, you could experiment with the above mentioned cheeses.
Weigh it down - This step is optional, but placing a heavy pan on top of the grilled cheese sandwich while cooking, ensures-
- a beautiful, even crust
- helps in making the bread crispy
- Melts cheese uniformly
Garlic - We use LOTS of fresh garlic and garlic powder to amp up the garlic flavor. Can never go wrong with too much garlic, right?
Butter - Room temperature butter helps to mix everything well and makes it easier to spread.
Salted or unsalted butter? - Anything works. If using salted, then make sure to reduce salt.
Salt - Grilled cheese garlic bread tastes best when it is a touch salty. But, season according to your taste.
Garlic Bread Grilled Cheese Sandwich
Ingredients
Garlic Butter
- 4 tablespoons unsalted butter room temperature
- 3 large garlic cloves minced
- ½ teaspoon dried parsley or 1 teaspoon minced fresh
- ¼ teaspoon salt
- ⅛ teaspoon garlic powder
Additional ingredients
- 4 slices Italian or soft French bread any white bread will work
- 1 cup shredded mozzarella cheese
Equipments used
- 12- inch Cast iron skillet
Instructions
- Make Garlic Butter - Stir all garlic butter ingredients together in a small bowl.
Make Sandwich
- Spread a thin coating of garlic butter on both sides of all 4 bread slices.
- Heat a medium cast iron skillet over medium heat. When moderately hot, place 2 bread slices and cook until the bottom gets golden.
- Turn slices over, place ½ cup mozzarella on one slice and close sandwich with the other slice ( golden side down). Cook until the bottom is golden brown.
- Turn sandwich over (place a heavy pan on the sandwich, pressing gently --> this weighs it down and makes a crispier sandwich), cook until the bottom is golden brown.
- Remove sandwich onto a plate and repeat process with remaining sandwiches.
