Ingredients

  • 1 recipe Mexican spiced chicken chopped
  • 3 cups Cilantro lime rice or use cooked white, brown rice or chopped lettuce
  • 1 cup pico de gallo or use chopped tomatoes
  • 1 can (15-ounce) black beans drained and rinsed
  • 1 can (15-ounce) whole kernel corn drained
  • 1 to 2 avocado sliced or chopped
  • ½ cup sour cream
  • chopped cilantro optional
  • sliced jalapenos optional

Instructions

  • Make Mexican chicken, cilantro lime rice and pico de gallo according to instructions.
  • Assemble bowls - Arrange rice in the bottom of a serving bowl and top with the chicken, pico de gallo, avocado, corn, black beans and sour cream. Garnish with chopped cilantro and jalapenos.
