    I first shared this skillet cookie over six years ago, and I felt it was time for a refresh! While the recipe remains largely unchanged, I've updated the photos and added step-by-step images, plus a brand new video in the recipe card to guide you through the process.

    This skillet dessert combines two of my all-time favorites into one irresistible treat like the pumpkin cream cheese cake! Picture soft and chewy chocolate chip cookies paired with rich, smooth cheesecake—all baked conveniently in a skillet.

    If you’ve ever made stuffed cookies, you know how tricky it can be to roll and stuff each one individually. This skillet cookie simplifies the process: just mix, spread, and bake for an effortless and delicious indulgence!

    So, what exactly is a skillet cookie? It’s essentially classic chocolate chip cookie dough spread into a cast iron skillet and baked as one giant cookie instead of individual pieces. Served warm from the skillet, it’s typically topped with a scoop of vanilla ice cream. The combination of the warm, gooey cookie melting into the cold ice cream is pure bliss—an indulgence that’s simply heavenly!

    Now, let’s introduce cheesecake into the mix! I layer a rich and creamy cream cheese filling between the cookie dough, creating a delightful contrast with the tangy sweetness. This luscious filling pairs beautifully with the caramel notes and melty chocolate in the cookie, resulting in utter perfection that you simply must try!

    The ingredients for this recipe are pretty standard for chocolate chip cookies and cream cheese filling. However, I’d like to highlight a few that you might have questions about:

    1. Cream cheese - Only use brick-style cream cheese and not the spreadable kind that’s sold in tubs.
    2. Sugars - This recipe calls for two types of sugar: brown and white. The white sugar results in crispy edges, while the dark brown sugar enhances its chewiness and fudgy texture. Additionally, you'll need extra white sugar for the cheesecake filling.
    3. Cornstarch -  It helps set the cream cheese filling while ensuring it remains smooth and creamy when sliced.
    4. Chocolate chips - I use a generous one cup of chocolate chips, plus a few extra for topping. After all, there’s no skimping on chocolate chips in a chocolate chip cookie recipe!
    5. Butter - You’ll need melted butter for this recipe. It ensures a soft and fudgy cookie texture, rather than a cakey one.

    No skillet? No problem!

    Don't own a cast iron skillet? Prepare the recipe as instructed and bake it in a 9-inch round cake pan, a 9-inch pie dish, or an 8x8 square baking pan. Alternatively, you can double the recipe and use a 9x13 inch baking dish, cutting it into squares for serving. Be sure to line the baking pans with parchment paper for easy removal. If you’re baking for a smaller family, simply halve the recipe and bake it in a 6-inch cast iron skillet.

    How to serve?

    Savor this chocolate chip skillet cookie warm from the oven, topped with a sprinkle of coarse sea salt. The cheesecake filling provides a perfect contrast in flavors and textures, making ice cream optional. However, if you want to indulge, pairing it with caramel, dulce de leche, or coffee ice cream elevates the taste even further!

Be sure to let it come to room temperature before serving for the best texture.

    Can I use store-bought cookie dough instead?

    You could use store-bought cookie dough, but I highly recommend sticking with this recipe. The carefully tested ratio of melted butter, brown sugar, and white sugar is specifically designed to create a fudgy texture that holds up even after cooling. Store-bought dough may result in a cakey, crumbly texture instead.

    Can I freeze it?

    Yes, you can cut the cookies into wedges and place them on a baking sheet to freeze until partially frozen. Then, transfer the wedges to zip-top bags and store them in the freezer for up to 2 months. Just leave the desired number of wedges at room temperature to thaw completely before enjoying!

    Equipment

    • Cast iron skillet

    Ingredients

    • 2 cups All purpose flour
    • ½ teaspoon Baking soda
    • ¾ teaspoon Salt plus more for topping
    • ¾ cup Unsalted butter, melted 1 ½ sticks
    • 1 cup Dark brown sugar, packed
    • ½ cup + 2 tablespoons white sugar divided
    • 2 large Eggs
    • 1 ½ teaspoons Vanilla extract divided
    • 1 cup Semi-sweet chocolate chips plus more for topping
    • 1 block Cream cheese, 8 ounces room temperature
    • 1 tablespoon Cornstarch

    Instructions

    • Preheat oven to 350°F and grease a 9 or 10-inch cast iron skillet with melted butter or cooking spray.

    Make cookie dough

    • Add all-purpose flour, baking soda and salt into a medium bowl and whisk to combine.
    • Add melted butter, brown sugar, ¼ cup plus two tablespoons white sugar, both eggs, and 1 teaspoon vanilla extract into a large bowl. Whisk for about one minute or it looks creamy and smooth.
    • Add the combined dry ingredients and chocolate chips and mix with a wooden spoon until it is evenly combined.

    Make cheesecake filling

    • Add the cream cheese, remaining ¼ cup sugar, cornstarch, and remaining ½ teaspoon vanilla extract into a bowl. I used the same bowl that I used to mix the dry ingredients.
    • Mix with a wooden spoon, until it has become smooth and creamy.

    Assemble and Bake

    • Evenly spread a little more than half of the cookie dough into the skillet. Next, layer all of the cheesecake filling on top. Finally, dollop the remaining cookie dough over the filling and gently spread it using the back of a spoon.
    • Sprinkle additional chocolate chips on top, followed by a light dusting of salt.
    • Bake for 33 to 37 minutes or the top looks deep golden brown.
    • Place pan on a wire rack to cool and serve warm or at room temperature.
