My kid’s go to option is always Chicken fettuccini Alfredo, every time in Italian restaurants. CREAMY, CARB LOADED DELICIOUSNESS!!! What’s not to love?

What is Fettuccini Alfredo?

AKA Fettuccini al burro is a humble Italian pasta dish made mostly with just three ingredients – fresh fettuccini pasta, butter and parmesan cheese.

This dish become more popular around the world and in the US. However, the recipe evolved from basic ingredients to fancier version with heavy cream, chicken or shrimp.

What is Ramen Alfredo?

Ramen Alfredo is just my easier version of the classic with ramen noodles. This recipe is a more lightened up version since, it does not have any heavy cream.

A quick run through of the ingredients to make this ramen:

  1. Ramen – Use chicken flavored ramen noodles ( we are not gonna use the seasoning packet).
  2. Butter – salted or unsalted / cold or room temperature is all good.
  3. Chicken stock – I used 33% reduced sodium chicken stock. If using regular sodium or no sodium chicken stock then adjust salt accordingly. If you have leftover chicken stock, then you could try using it in Instant Pot Creamy Tuscan Chicken Soup or Spicy Cilantro Lime Rice with Black Beans and Corn
  4. Milk – whole or reduced fat is good. Try staying away from fat free. This is a Alfredo after all.
  5. Parmesan cheese – Ain’t a Alfredo sauce without parmesan
  6. Seasoning – Salt, pepper, garlic powder and fresh/dried parsley

Garlic powder and parsley is optional, since this is a 5 ingredient recipe.

This easy Alfredo recipe is a great kid favorite lunch or dinner / college kids / or just anyone who’s craving something creamy and delicious without much work.

A quick note on 5 ingredient recipes – Salt, pepper, cooking oil and water are not counted as ingredients.

How to make Ramen noodles with Alfredo sauce?

1.Bring butter, chicken stock, milk, garlic powder (if using), salt and pepper to a boil.

2.Add ramen noodles (discard seasoning packet). Cook until ramen is cooked and some of the liquid remains.

3. Stir in parmesan cheese and dried or fresh parsley.

Tips and tricks on making this ramen noodles recipe:

Salt – Butter (if using salted), chicken stock and parmesan cheese have salt. So, use salt accordingly.

Chicken stock – I used 33% reduced sodium chicken stock. If using regular sodium or no sodium chicken stock then adjust salt accordingly.

Liquid – You want some of the liquid remaining before taking off heat. This liquid helps for the parmesan to melt in it making luxurious garlic ramen.

Ramen – For al dente ramen, make the entire process in high heat and in medium-high heat for a more softer ramen.

Discard seasoning packets.

Ramen Alfredo - Easy Alfredo recipe ever! If you love Fettuccini Alfredo, then you will absolutely devour this creamy, comforting garlic ramen.

Total Time 9 minutes

Ingredients

  • 2 tablespoons butter
  • 1 and 1/4 cup chicken stock (I used 33% reduced sodium)
  • 1 cup milk
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon salt or to taste (refer notes)
  • ground black pepper, to taste
  • 2 ( 3 ounces ) package instant ramen noodles (chicken flavor) flavor packets discarded
  • 1/2 teaspoon dried parsley or fresh (optional)
  • 1/4 cup grated parmesan cheese

Instructions

  1. Add butter, chicken stock, milk, garlic powder (if using), salt and pepper in medium saucepan, stir and bring to a boil over medium-high heat.
  2. Add ramen noodles and cook ( cook in high heat for al dente noodles and medium-high for softer noodles), stirring every 20-30 seconds to loosen the noodles (so that it cooks evenly).
  3. Cook until some of the liquid remains, take off heat and immediately stir in parmesan and parsley (if using).
  4. The sauce will thicken as it cools. Serve Ramen Alfredo hot!!!

Notes

Chicken stock – I used 33% reduced sodium chicken stock. If using regular sodium or no sodium chicken stock then adjust salt accordingly.

Salt – Butter (if using salted), chicken stock and parmesan cheese have salt. So, use salt accordingly. I found 1/ teaspoon salt to be perfect for this recipe with unsalted butter and 33% reduced sodium stock.

  1. If you’re not using the flavor packet, why do you need to buy chicken flavored? All you need is the plain ramen so you could use any flavor since you don’t use the flavor packet. Right?

    1. Hi Tammy, I used chicken flavored an haven’t tried it other flavors 🙂 But, I guess that it does not make a difference, since we are using the seasonings. However, I will suggest that you halve the recipe first time and try with just one packet. Hope it helps:)
