    While the potatoes cook in the skillet, I warm and char the tortillas, mix the sauce, and prep the pico de gallo. By the time the potatoes are ready, everything is done and ready to assemble. It's a simple vegetarian meal that you'll want to make on repeat!

    These aren’t traditional tacos de papa!

    These potato tacos are inspired by Mexican flavors, but they’re not traditional tacos de papa. Traditional tacos de papa are typically made with boiled, mashed potatoes tucked into tortillas, which are then folded or rolled and fried until crisp. They’re often served with toppings like cabbage or lettuce, salsa, crema, and queso fresco or Cotija.

    For this recipe, I take a different approach and cook the potatoes right in a skillet. The raw, chopped potatoes develop crispy, golden edges while staying creamy and tender inside, and they soak up all those Mexican-inspired seasonings as they cook.

    The result? More texture, more flavor, and a little crunch in every bite. It’s a fun twist on potato tacos—and one I personally prefer!

    Similar to my air fryer chicken tacos, I also prefer pico de gallo over salsa for these tacos. Pico adds a fresh, crunchy, bright contrast to the warm, seasoned potatoes without adding too much moisture. That way, the tortillas stay nice and sturdy instead of getting soggy.

    • Use Yogurt - Use plain yogurt instead of sour cream.
    • Sauce options- Try drizzling avocado crema instead of the sauce!
    • Best potatoes to use - Use Yukon Gold or Russet variety.
    • Tortillas - Use yellow or white corn tortillas.

    What kind of potatoes are best for tacos?

    I recommend Yukon Gold or russet potatoes for making potato tacos—they both work beautifully, but give you slightly different results.
    Yukon Gold potatoes have a naturally creamy center while getting crispy around the edges, and they hold their shape well as they cook.
    Russet potatoes turn fluffier inside and get extra crispy on the outside, making them perfect if you love a little more crunch.
    Either one works great—it just comes down to whether you prefer creamy and crisp or fluffy and extra crispy!

    Should you boil potatoes first for potato tacos?

    Nope! I skip the boiling for these potato tacos. Traditional tacos de papa usually start with boiled and mashed potatoes, but I take a different approach here.
    I cook raw, chopped potatoes right in a skillet, which lets them develop beautifully crispy, golden edges while staying tender and creamy inside. They also have more opportunity to soak up all those delicious seasonings as they cook, making them way more flavorful and giving the tacos a great mix of textures.
    So, no extra pot of boiling water—and no bland, mushy potatoes!

    How to cook tortillas on the stove?

    To cook directly over the flame: If you're using a gas burner, set it to medium-low heat. Using tongs, place a tortilla directly over the flame. Once it begins to brown, flip it quickly to char the other side, then remove from heat.
    To cook in a skillet: Heat a cast iron skillet and cook each tortilla for 15 to 30 seconds on each side, until you see a few browned or darkened spots. Keep them warm by wrapping them in a clean kitchen towel.

    Ingredients

    for the potato filling

    • 2 pounds potatoes Russet or Yukon gold
    • 2 tablespoons vegetable oil
    • 2 large garlic cloves minced
    • 1 tablespoon chili powder
    • 1 teaspoon salt
    • ½ teaspoon cumin powder
    • ½ teaspoon coriander powder
    • ¼ teaspoon cayenne pepper powder

    for the sauce

    • ¼ cup sour cream or use plain yogurt
    • ¼ cup mayonnaise
    • ½ cup finely minced cilantro
    • ½ jalapeño pepper minced (remove seeds to make it less spicy)
    • 1 teaspoon lemon juice
    • ⅛ teaspoon salt or to taste
    • 2 to 4 teaspoons water

    to finish the tacos

    • 8 corn tortillas
    • pico de gallo

    Instructions

    • Make potato filling: Peel the potatoes and cut them into ½-inch cubes. Heat a large nonstick skillet over medium heat and add the oil. Once hot, add the potatoes, garlic, chili powder, salt, cumin, coriander, and cayenne. Stir well so the potatoes are evenly coated with the spices.
      Spread the potatoes into an even layer, cover the skillet, and cook for about 15 minutes, or until they’re tender. Give them a stir every few minutes so they cook evenly, and lower the heat if they start browning too quickly.
    • 👉 While the potatoes are cooking, make the sauce, prep the pico de gallo, and warm the tortillas. By the time the potatoes are ready, everything else is done—so you can have dinner on the table in under 30 minutes!
    • Make sauce: Stir all the sauce ingredients together in a bowl. If it feels too thick, add a little water at a time until you reach your desired consistency. Just be careful not to add too much—you want the sauce creamy and drizzleable, not watery.
    • Serve: Layer each warm tortilla with a generous scoop of the seasoned potatoes, then drizzle with the sauce and top with fresh pico de gallo. Finish with chopped cilantro and sliced jalapeños for a little extra freshness and heat. Enjoy!

    What to serve with potato tacos

    These 30-minute meatless tacos are satisfying on their own, but adding a simple side can turn them into a complete Mexican-inspired dinner.

    Black beans and rice are one of my favorite choices because the beans add extra protein to the meal. You could also serve them with cilantro-lime rice, seasoned black beans, or refried beans.

    For something fresh and colorful, try air-fried corn, guacamole, or a simple crunchy salad. I especially love the combination of potato tacos, black beans and rice, and guacamole—easy, filling, and so flavorful!

      This has been my go-to recipe for potato tacos. I add some Cuban black beans along with the pico de Gallo and sauce, and the flavor combination is wonderful.
