How do no-bake cheesecakes set without gelatin?
A reader recently asked what helps these mini no-bake cheesecakes set since the recipe doesn’t use gelatin or agar agar. The secret is the combination of full-fat cream cheese, a little acidity, and plenty of chilling time!
Full-fat, block-style cream cheese is essential because it has a firmer texture and less moisture than cream cheese sold in tubs. As it chills, the fat firms up and helps the cheesecake hold its shape. The lemon juice and sour cream add a gentle tang, while the acidity helps tighten and set milk proteins. And powdered sugar has a small amount of cornstarch which also helps with the setting.
Finally, the cheesecakes need enough time in the refrigerator to firm up. Chill them for at least 8 hours, or preferably overnight, for the best texture. The result is a smooth, creamy cheesecake that holds together beautifully without any added setting agents.
How to make no-bake mini cheesecakes?
You can find full printable recipe below, but here is a quick overview of the procedure along with step-by-step photos.

Step 7 - Refrigerate pan for at least 8 hours to firm up.
Tips for Success
- Use Room Temperature Cream Cheese - Let your Philadelphia cream cheese sit out until fully softened for a smooth, creamy filling.
- Choose Brick-Style, Full-Fat Cream Cheese - Always use full-fat brick cream cheese—not the spreadable kind in tubs. The brick version provides the structure you need, especially since this recipe doesn’t use gelatin.
- Swap Sour Cream with Greek Yogurt - Plain full-fat Greek yogurt works perfectly as a substitute for sour cream, adding creaminess with a slight tang, as in the strawberry and cream bites.
- Stick to a Standard Muffin Pan - Use a regular muffin pan with liners for the perfect size and portion—mini muffin pans won’t work well here.
- Use Full-Fat Dairy - For best texture and flavor, stick to full-fat cream cheese and yogurt (or sour cream). Reduced-fat versions may not set as firmly.
- Serve Cold - Keep the no bake mini cheesecakes refrigerated and only remove them right before serving to maintain their firmness.
- Remove Liners Carefully - When peeling off the paper liners, go slow and gently to avoid pulling off the graham cracker crust.
- Graham Cracker Crumb - You’ll need about 4 full sheets of graham crackers to make ½ cup of crumbs. Grinding your own gives the best texture and flavor. To make graham cracker crumbs, place the crackers in a food processor and blitz until they become fine crumbs. It takes 10 to 20 seconds in my food processor. I explain more in my chocolate mousse tart recipe.
- Chill Overnight – For the best results, let the cheesecake bites chill overnight. This gives the crust time to set properly and ensures the filling firms up into a creamy, stable texture.

No Bake Mini Cheesecakes
Ingredients
For the crust
- ½ cup graham cracker crumbs
- 1 tablespoon packed dark brown sugar
- 2 tablespoons melted butter
For the filling
- 1 block (8-ounce) cream cheese, room temperature use full fat variety
- ⅓ cup powdered sugar
- 2 tablespoons sour cream or use plain Greek yogurt
- 1 teaspoon lemon juice
- ½ teaspoon vanilla extract
Whipped Cream (optional)
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
Make the crust
- Make crust. Stir ½ cup graham crumbs and 1 tablespoon packed brown sugar together in a small bowl. Add 2 tablespoon melted butter and mix well until the crumbs are evenly moistened. The mixture should look like wet sand and hold together when you pinch it between your fingers.
- Press into pan. Line a standard 12-cup muffin pan with paper liners. Add 2–3 tablespoons of graham cracker crumbs to each liner and press firmly into an even layer using a tablespoon measure, the bottom of a ¼-cup measuring cup, or a shot glass with straight sides.👉 Pressing the crumbs firmly is the key to a sturdy crust that holds together when you remove the no bake cheesecakes.
- Chill. Place pan in the fridge for at least 2 hours (or stored up to a day) or until firm.
Make the filling
- Make filling. Add 1 block cream cheese and ⅓ cup powdered sugar into a large bowl and beat with an electric beater for about 3 minutes on high or creamy and smooth. Add 2 tablespoon sour cream, 1 teaspoon lemon juice and ½ teaspoon vanilla extract and beat for an additional one minute or combined.
- Fill and chill. Divide the cheesecake filling evenly among the 12 chilled crusts, using about 2 tablespoons per cup. Smooth the tops, then refrigerate for at least 8 hours, or until fully set. You can keep the mini cheesecakes covered in the refrigerator for up to 4 days.
- Serve. Pipe or dollop whipped cream on top of each cheesecake, top with fresh berries. Keep the cheesecakes chilled until serving time! Peel off the paper liners slowly and gently to keep the graham cracker crust from sticking to the paper and breaking apart.👉 To make whipped cream, add 1 cup heavy cream, ¼ cup powdered sugar and 1 teaspoon vanilla extract into a large bowl and beat with an electric beater, until thick.

Recipe FAQS
You can serve these mini no-bake cheesecakes either way! It really depends on the occasion and how you want to present them.
With the paper liners: This is the easiest option for parties, potlucks, and casual gatherings. The liners act like little plates, making the cheesecakes easy to pick up and serve while helping them hold their shape on a platter. If you’re serving a crowd, pop the cheesecakes in the freezer for 10–15 minutes before setting them out. This helps them firm up and makes the liners easier to peel off when it’s time to eat.
Without the paper liners: If you’re serving the cheesecakes as a plated dessert or at a more formal dinner, removing the liners shows off the pretty layers of graham cracker crust and creamy cheesecake filling.
For the cleanest removal, make sure the cheesecakes are thoroughly chilled straight from the refrigerator. If they warm up too much, the filling can soften and become sticky, making the liners harder to remove without disturbing the crust. Peel the paper away slowly and gently to keep each mini cheesecake looking its best
Not if you give the cheesecakes enough time to chill! Once the filling is fully set, the paper liners should peel away cleanly without sticking. For the easiest removal, unwrap the mini cheesecakes while they’re still cold, straight from the refrigerator. As they warm up, the filling softens and can become a little sticky, making the liners harder to remove neatly.
I recommend full-fat, block-style Philadelphia cream cheese for these no-bake mini cheesecakes. It has a rich, creamy texture and firms up nicely in the refrigerator, helping the cheesecakes hold their shape without gelatin. Avoid low-fat or reduced-fat versions, as they contain more moisture and may leave you with a softer filling that doesn’t set as well.
No-bake mini cheesecakes will keep for 3–5 days in the refrigerator or up to 3 months in the freezer when stored properly. Since the filling isn’t baked, it can soften and release moisture over time, and the graham cracker crust will gradually become softer as it absorbs moisture from the filling.
In the refrigerator: Store the cheesecakes in an airtight container for 3–5 days. For the best texture, enjoy them within the first few days, as the crust may soften by day 5. If you’re adding fresh fruit, such as strawberries or blueberries, or whipped cream, wait until just before serving to keep the toppings fresh and prevent excess moisture from affecting the filling. Chocolate ganache and caramel toppings generally hold up better.
In the freezer: These mini cheesecakes are great for making ahead and can be frozen for up to 3 months. First, chill them in the refrigerator until completely set. Leave the paper liners on to help protect their shape, then arrange the cheesecakes in a single layer in a freezer-safe container or heavy-duty freezer bag. When you’re ready to serve, transfer them to the refrigerator and let them thaw for about 2–4 hours.

What are some popular toppings for mini cheesecakes?
While no-bake mini cheesecakes are rich, creamy, and delicious all on their own, they also make the perfect base for fun and festive toppings. Here are some of the best topping ideas to elevate your cheesecake bites:
- Fresh Fruit – Brighten things up with fresh berries like raspberries, blueberries, or sliced strawberries. In summer, go tropical with fresh mango, peaches, or kiwi.
- Pie Fillings – A spoonful of pie filling adds instant flavor and visual appeal. Try cherry, strawberry, blueberry, or apple (like the one used in our Apple Hand Pies). It’s especially perfect for fall or Thanksgiving gatherings.
- Whipped Cream – A swirl of lightly sweetened whipped cream adds a soft and creamy contrast. For a twist, try brown sugar whipped cream like the one used in our Sweet Potato Pie—it’s next-level good!
- Chocolate Ganache or Sauce – Drizzle with rich melted chocolate, silky ganache, or even Nutella for a decadent finish that chocolate lovers will adore.
- Caramel Sauce – A generous drizzle of caramel or dulce de leche adds buttery sweetness. Top it off with crushed toasted pecans for a satisfying crunch.
- Candied Nuts – Chopped candied walnuts or the stovetop candied pecans add texture, flavor, and a touch of holiday flair.
- Fruit Preserves or Jam – A dollop of raspberry, fig, or apricot preserves offers a pop of color and sweet-tart flavor with almost no effort.
- Cranberry Sauce – For a Thanksgiving-worthy topping, spoon over some homemade cranberry orange sauce. Its tangy-sweet profile pairs beautifully with the creamy filling.
Freezing no bake mini cheesecakes
Freezing is a great way to prep mini cheesecakes ahead of time for parties, holidays, or whenever a sweet craving hits. Avoid adding toppings before freezing.
How to freeze?
- Let Set Fully – Chill the cheesecakes in the fridge for several hours or overnight until completely firm.
- Flash Freeze – Freeze uncovered on a baking sheet for 1–2 hours to firm up and hold their shape.
- Wrap & Store – Transfer to an airtight container or freezer bag (use parchment if stacking). Freeze for up to 2 months.
How to thaw?
- Fridge (Best Method) – Unwrap and thaw in the fridge overnight for best texture.
- Quick Thaw – Let sit at room temperature for 20–30 minutes.
Add toppings such as fresh fruit, whipped cream, or sauces after thawing for the best texture and appearance.

Awesome!
I want to make this but I have a question. What is the setting agent in this recipe? You've not used gelatin or agar agar, then will it hold shape for long?
Appreciate your response
Thanks so much
Maria Doss
Hi Sabina, The recipe doesn't include a setting agent. Instead, the cream cheese naturally firms up when refrigerated, which helps to maintain the filling's structure. Please be aware that these mini cheesecakes are best served cold, directly from the fridge - Maria
