Easy Homemade Pizza Dough

This easy homemade pizza dough is ideal for making thick or thin crusted pizzas, garlic knots, calzones, strombolis, rolls, breadsticks and many more. 



We love pizzas around here and I make a lot of it. 

Is there anyone out there who doesn’t care for a slice? 

This best pizza dough recipe has been my go to for a really long time. At least 15 years…. 

Why is this the go-to pizza dough recipe?

Let us take a look at the ingredients to make this easy homemade pizza dough:

Flour : I like to use only unbleached all purpose flour for soft, tender dough. You could substitute bleached all purpose flour, but it will affect the water absorption. Bread flour will give you a chewier crust, so use bread flour if that is what you are going for.

Yeast : Active dry yeast it is! No need to proof saving you an additional step and few minutes. All you have to do stir the yeast along with all dry ingredients and you are good to go.

Salt : No salt, no flavor.

Oil : Olive oil adds wonderful flavor to the crust. I use extra virgin for added goodness.

Water: The basic but the most important. The temperature of water is most important when working with yeast dough. We need lukewarm which is 105F – 115F. Use a candy thermometer if you have one. but, an easy way to check without a thermometer is to sprinkle few drops of water on the inside of your wrist. It should neither feel hot nor cold. Hot water will kill the yeast whereas cold water will not activate the yeast. 

How to make pizza dough at home?

Step-1: Add all purpose flour, yeast and salt into the bowl of your stand mixer. Give a good whisk (refer pictures above).

Step-2: Stir in olive oil with a butter knife or spoon (refer pictures below).

Step-3: Stir in lukewarm water with the butter knife, until most of the water is distributed (refer pictures below). This step of stirring ingredients before turning on the stand mixer, gets the mixer kneading almost instantly.

Step-4: Fix the bowl to your stand mixer with the dough hook, and let the mixer knead for about 2 minutes (start low and build to high).

Step-5: Transfer dough onto the kitchen counter, shape into a loose ball. In the mean time, grease the inside of your bowl with a touch of olive oil, place the dough ball, turn around so all sides are coated with the ball. Cover with a clean kitchen towel, place in warm spot for about one and half hours, until doubled in size.

The dough is now ready to be baked into a pizza or into garlic knots, calzones, strombolis, rolls, breadsticks and many more.

Easy Homemade Pizza Dough

  • 3 and 1/2 cups all purpose flour, spooned and leveled
  • 3 teaspoons active dry yeast
  • 1 and 1/2 teaspoon salt
  • 3 tablespoons olive oil
  • 1 and 1/4 cup + 1 tablespoon lukewarm water, refer notes


  • Add flour, yeast and salt into the bowl of your stand mixer, whisk together to combine.
  • Add olive oil, stir with a butter knife or spoon to distribute and then stir in water lukewarm water until moistened.
  • Attach bowl to the stand mixer along with the dough hook and knead on high speed for 2 minutes, until smooth. (If dough looks a bit dry then add water by the tablespoons or if it looks sticky then add 1 or 2 tablespoon flour and knead until it looks smooth again). You will need a soft but NOT STICKY dough. 
  • Remove dough onto a counter and shape into a ball. Lightly coat the (now empty) bowl with olive oil on all sides. Place dough back into the bowl and turn it around, so it coats with oil on all sides. Cover bowl tightly with a clean kitchen towel and place in the warmest spot of your kitchen for 1 to 1 1/2 hours or until doubled in size.
    (During cooler days, I adopt to the oven method to rise the dough : Set the oven temperature to 170 degrees F (or the lowest that your oven can go to). As soon as the oven begins to heat, let it warm up for 20-30 seconds (don’t let it go to 100 degrees). Turn the oven off and place the bowl inside and let rise until doubled. If the oven reaches 100 degrees or higher, leave the oven door open for a few minutes to cool it down a touch before keeping the dough). 
  • Use pizza dough in your favorite recipe. 
    (Makes dough for 2 medium size pizzas)


Luke warm water is 105F – 115F. An easy way to check without a thermometer- sprinkle few drops of water on the inside of your wrist. It should neither feel hot nor cold.

Can you freeze this and use it at a later date?

Hi Heather, Absolutely! We recommend freezing after the first rise. Thaw completely at room temperature, shape and into pizza and let rise for about 30 minutes, before cooking - Maria

I am planning on making this pizza dough this Saturday for dinner. With that said, how long can the dough be out on counter before baking pizza? Should I wait and make the dough later in the day? This has always been a puzzling question because I like to do prep earlier in the day and be done with it. Looking forward to your response.

Hi Ashley, I love your interest in prepping things ahead of time! It comes in very handy especially while entertaining. Unfortunately, this dough is a fresh one and it needs to made after the rising. It can be pushed for 1-2 hours after rising on cooler days. But, not more. That being said, I will suggest this recipe from Pioneer woman. This pizza dough will work great for you since it can be made 3-4 days in advance. Hope it helps:)

Hi Shams, You use vegetable oil instead of olive oil and the dough will work. I prefer olive oil due to the authentic Italian taste that it contributes to the pizza dough, hope it helps:)
