Let us begin with the basics.

What is kulfi? 

Kulfi is a traditional Indian ice cream, but more denser. It is usually made be boiling milk over low heat for a long period, until it has reduced considerably in volume and  then sweetened, flavored and frozen in small earthen pot molds known an “Matki”. But, aluminum / stainless steel / plastic molds are widely used in modern times. It is almost uncommon to find kulfi served in scoops like ice cream.

Some recipes include using thickening agents like cornstarch or bread crumbs to give a more creamier consistency.

Kulfi ice cream comes in various flavors such as cardamon, saffron, mango, rose, pistachio, almond, orange, chocolate and strawberry.

Chocolate kulfi is just a fun variation to the traditional kulfi! Kids love all things chocolate and this chocolate kulfi ice cream recipe is gonna become every kid’s favorite.

Ingredients to make chocolate kulfi at home:

  1. Heavy cream
  2. Sweetened condensed milk
  3. Cocoa powder
  4. A dash of salt

(Please note that salt is not counted as an ingredient)

How to make Chocolate Kulfi?

It is one of the most easiest recipes that you will ever make. No cooking involved, so it makes a great project for children.

1.Add cold heavy cream into a large bowl and beat with a hand held electric beater (If you have a stand mixer, then use it with the whisk attachment), until thick and soft peaks form.

2.Add cocoa powder

3. Add sweetened condensed milk and salt (adding in this order, will help the cocoa powder not make make a mess while mixing)

4. Have disposable Dixie cups or popsicle molds ready

5. Transfer mixture into molds and insert a popsicle stick in the middle. Freeze overnight.

Cocoa powder – A good quality cocoa powder is great for this recipe. Try to use the exact measure or a bit less (if you want less chocolatey flavor).

Add ins – Customize the chocolate kulfi recipe. Mix in mini chocolate chips, finely chopped dark chocolate, shredded coconut or finely chopped almonds for more flavor/ crunch.

3 Ingredient Chocolate Kulfi

Super easy Chocolate Kulfi Recipe that is amazingly creamy!!! Made with just 3 ingredients, this chocolate kulfi at home is better than anything store bought and you do not need an ice cream maker.

Instructions

    1. Add heavy cream into a large bowl, beat with a hand held electric beater (on high speed) until thick and softly whipped (when soft peaks form), about 1 1/2 minutes. 
    2. Add cocoa powder and then followed by sweetened condensed milk (adding in this order will help the cocoa powder in not making a mess while beating) and salt. Beat for about 30 seconds (begin low and build to high), until mixed completely (scrape the sides of the bowl once during beating).

To make Chocolate kulfi molds


    Transfer mixture into popsicle molds or paper cups. Insert popsicle sticks and place in freezer overnight. ( If using paper cups – when ready to eat, snip off a bit of the cup and peel off pop, refer video)

To make Chocolate Kulfi Ice Cream


Transfer mixture into a freezer safe container, cover and freeze overnight. To serve, scoop chocolate kulfi into serving bowls. 

Optional Add-ins- Customize the chocolate kulfi recipe. Mix in mini chocolate chips, finely chopped dark chocolate, shredded coconut or finely chopped almonds for more flavor/ crunch.

Chocolate kulfi is best enjoyed in 1-2 days.

Notes

Cocoa powder – A good quality cocoa powder is great for this recipe. Since cocoa powder varies by the brand, I recommend adding 1/2 cup minus 1 tablespoon cocoa powder to the recipe, taste after it is thoroughly mixed in (remember that the chocolate flavor will deepen as it it freezes) and then add more if you desire.

I used  Dixie paper cups and Popsicle sticks. You can use any popsicle mould that you have around.

Don’t have any moulds? Transfer kulfi mixture into any freezer safe container and freeze until firm. Scoop ice cream into serving bowls.
