    Types of Dates

    Although there are several types of dates found all over the world, there two main popular ones available in US grocery stores - Medjool and Noor variety.

    Medjool dates, often hailed as the king of dates, are prefered for their large size, soft texture, and remarkably sweet and complex flavor reminiscent of caramel. They are popularly enjoyed on their own as a snack and are also used in desserts and baking recipes.

    In contrast, Noor dates are slightly smaller and firmer, with a drier texture and lower moisture content, resulting in less stickiness.

    I prefer using Medjool dates in cooking because their soft texture allows them to blend easily, eliminating the need for pre-softening. One of my favorite guilt-free treats that I often make an healthy after school snack is to pit Medjool dates and then fill the cavity with almond butter and stuff one whole raw almond inside.

    How do you store dates?

    Properly storing dates is crucial for maintaining their freshness and quality over time. For short-term storage, keep dates in an airtight container at room temperature. For longer storage, refrigerate them to extend their shelf life for several months. Alternatively, freeze dates in a tightly sealed container where they can stay good for a year or more.

    How do you pit dates?

    Pitting dates is simple and straightforward process:

    1. Using a small pairing knife, make a lengthwise cut along one side of the date.
    2. Gently open it with your fingers and remove the pit, using your fingers or the tip of the knife.
    3. Discard the pit and check for any pit fragments remaining inside.
