    Mango Rice Pudding

    This Mango Rice Pudding is so creamy, luxurious and absolutely terrific! It is one of the tastiest desserts to make using fresh mango. Made in an instant pot with just 5 ingredients, it is inspired by Asian mango sago.

    This mango rice pudding is inspired from mango sago, which is a popular Asian dessert made with ripe mangoes, tapioca pearls aka sago, coconut milk, and sugar.

    It is sweet, creamy, served chilled and makes a tasty mango dessert using fresh ripe summer mangoes, like the mango mug cake.

    I swapped out tapioca pearls or sago for rice, to create a delicious dessert that's easy to make with basic pantry staples. It's the kind of sweet treat you'll crave all summer! Check out more summer recipe ideas.

    1. Rice -  Any white rice like Basmati, Jasmine, or a medium-grain will yield a creamy texture.
    2. Mango - As for all mango recipes, use sweet and ripe mangoes.
    3. Coconut milk - Canned coconut milk is creamy and convenient.
    4. Condensed milk - Brings in a velvety texture, richness, and necessary sweetness.
    5. Cardamom - I love ground cardamom with mango.

    Substitutions & Variations

    • Don't like coconut milk? You can use regular whole milk.
    • Switch up flavorings and use vanilla extract instead of cardamom.
    • Add some crunch and stir in chopped pistachios or toasted almonds into the mango pudding.

    Step 1 - Add rinsed rice and coconut milk into an instant pot.

    Step 2 - Cook for 5 minutes and let the pressure release naturally.

    Step 4 - Mix along with ground cardamom and let cool.

    Step 6 - Grind the chopped mango into puree.

    Step 7 - Add the mango puree and chopped mangoes into the cooled rice.

    Step 8 - Mix until combined.

    Tip: Since the sweetness of mangoes can vary, adjust accordingly. Taste and add extra condensed milk if necessary.

    How to serve?

    When it's time to enjoy the tropical rice pudding, add your favorite toppings and serve it chilled! My top picks are additional diced mangoes, chopped pistachios or toasted almonds, and a garnish of fresh mint leaves for an eye-catching finish, like I showcase in the mango mousse recipe.

    How to store?

    Keep leftovers stored in the fridge where they will stay good for 2 to 3 days or freeze for up to 1 month. Leave overnight in the fridge to thaw.

    • Use sweet mango - Select a sweet ripe mango for the best tasting recipe.
    • Cardamom - Use freshly ground cardamom instead of store bought cardamom powder.

    Equipment

    Ingredients

    • ½ cup white rice I used Basmati
    • 1 cup coconut milk
    • ⅛ teaspoon salt
    • ½ cup sweetened condensed milk (adjust based on the sweetness of the mangoes used)
    • 1 teaspoon ground cardamom
    • 2 to 3 ripe mangoes
    Prevent your screen from going dark

    Instructions

    • Wash and drain rice. Add it to the instant pot along with coconut milk, salt and ½ cup water.
    • Mix, close and lock lid (making sure that valve is set to seal), cook on manual for 5 minutes.
    • When cooking time is done, let instant pot be in warm mode for 20 minutes or do a natural pressure release.
    • Open the instant pot, add the condensed milk and cardamom powder. Mix thoroughly and allow it to cool.
    • Meanwhile, chop the mango into small cubes.
    • Grind 2 cups of chopped mango into a fine puree and pour it into the cooled rice mixture along with ½ to 1 cup of chopped mango cubes. Stir to combine.
    • Give a taste, and if it needs more sweetness, add extra condensed milk.
    • Store it in the fridge to help it thicken and enjoy chilled or at room temperature.

    Notes

    Since the sweetness of mangoes can vary, adjust accordingly. Taste and add extra condensed milk if necessary.
    Use vanilla extract instead of cardamom.
