    1. Skin color: Ripe mangoes come in bright colors like yellow, orange, or red. Avoid mangoes with green skin; they're not ripe yet.
    2. Squeeze test - Give the mango a gentle press. If it yields a bit, like a ripe peach or avocado, it's perfect. But if it's too squishy, it might be overly ripe or bruised. Still, it should feel firm when you touch it.
    3. Wrinkled skin - Some varieties of mangoes get wrinkles as they ripen, showing they're ready. But too many wrinkles mean they're too ripe.

    How to cut and dice a mango for recipes?

    1. Stand the mango upright on a cutting board.
    2. Slice off the two sides of the mango, going around the large seed in the center.
    3. Using the tip of a small pairing knife, score each mango half in a crosshatch pattern, being careful not to cut through the skin.
