Mexican may just be one of our all time favorite foods. Once or twice a week … or more. It is easy, healthy, convenient, delicious, easy to find ingredients and most importantly spicy <– my favorite.
Be it fajitas, nachos, tacos, quesadillas or even the simplest creamy guac or fire roasted salsa, it’s just too darn delicious.

If I have to choose one of my favorites from all things Mexican then it will surely be TACOS.
There is something about holding a warm overstuffed tortilla with delicious fillings and garnishes and taking a bite trying to be careful not to make a mess. Sorry forks and spoons, I love ya but hands are magical!

Store-bought seasoning for chicken tacos are easy but homemade taco seasoning for chicken is cheaper and totally customizable as per your taste —> less spicy / more spicy / less salt / less oniony …….. you get the idea.
Most importantly, this authentic chicken taco seasoning is really, really GOOD!!
What is Chicken Taco Seasoning made of?
A combination of amazing spices like
- chili powder
- garlic powder
- onion powder
- paprika
- black pepper powder
- coriander powder
- cumin powder
- cayenne pepper powder
- oregano
- salt
It is all about the right spices and in perfect proportion.

The best part about this chicken and taco seasoning is that you can make a huge batch and store for whenever you need instead of having to make a fresh batch every time.

Homemade chicken seasoning is mostly the basics – salt, pepper, garlic powder, cayenne, coriander powder, cumin powder, paprika. The only spice that you might not have is the Mexican oregano. This chicken seasoning for tacos will still be delicious without it.

How to season chicken for tacos?
- Make spices for Mexican chicken
- Rub boneless, skinless chicken thighs or breasts plus couple of teaspoons of vegetable oil. Let sit for 1-2 hours in the refrigerator. Grill or cook in a cast iron skillet on both sides <— seasoned chicken for tacos
- Alternatively, chop boneless chicken into bite size pieces. Cook in cast iron pan with vegetable oil and best taco seasoning for chicken and cook until chicken is cooked through <—easy chicken taco meat

Ingredients
- 1 teaspoon chili powder
- 1 teaspoon coriander powder
- 1 teaspoon paprika
- 1/2 to 1 teaspoon salt, use as per your taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon Mexican oregano
- 1/4 teaspoon cayenne pepper powder
Instructions
- Stir all ingredients together.

I thought this was delicious! The only alteration I will make next time is I will cut the salt down quite a bit. I found that the salt was the first thing I tasted.

If I don’t have mexican oregano, do I just leave it out, or try to substitute something different?
Just leave it out and go ahead with the rest:)
Regular oregano works just fine
First time I’ve cooked with Taco spice. Used it on a Keto Mexican chicken thigh recipe. It was truly wonderfully delicious!!!
My favorite Mexican seasoning. My wife is sensitive to the preservatives in the packets and this is the perfect alternative

Had to come back to leave a review. After our grocery store stopped carrying McCormick Chicken taco seasoning I panicked as it was a staple. I looked up online how to make CHICKEN taco seasoning and came across this. It was so good and so much better than McCormick! We add 1.5-2lbs of boneless chicken thighs to the crock pot. Then we add 1/2 cup of water, a minced garlic clove, and a can of total diced tomatoes. Cook on high for 4 hours and then shred. Serve with flour tortillas, Monterey Jack cheese, white diced onion, diced tomato, shredded lettuce, and serve refried beans and Mexican style rice on the side. Don’t forget the guacamole. Best. Dinner. Ever.
And I meant to add in addition to this seasoning. And I meant Rotel Diced tomatoes, 10 oz can.
Can I substitute dried cilantro leaves for the coriander?
Hi Rochelle, Ground coriander is one of the main ingredient in this recipe. Dried cilantro might not work exactly the same way, however it might also not be a bad substitute, Maria
