How to warm tortillas?
- Over a gas flame – This method gives the tortillas deliciously authentic, lightly charred edges. Place the tortilla directly over a medium gas flame and use tongs to rotate it every few seconds. Once you see small blackened spots, flip and repeat on the other side. Keep a close eye—it chars fast, so adjust the flame as needed!
- On a cast iron skillet – Preheat the skillet over high heat. Place the tortillas in a single layer and toast for 15–30 seconds per side, until golden and slightly charred in spots.
- In the microwave – Place tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave for 30–60 seconds, depending on how warm and soft you want them.
Recipe tips
- Use medium or large size shrimp.
- Grate garlic using a microplane.
- Use red cabbage instead of white.
- White or yellow corn tortillas are best for this recipe.
