    Cream Cheese Stuffed Mushrooms in Air Fryer (Vegetarian)

    Tasty Air fryer Stuffed Mushrooms are made with an easy cheesy, cream cheese filling that is loaded with herbs, spices and green onions. It takes less than 10 minutes of prep time and 8 minutes to cook - Quick and Easy!

    Stuffed mushrooms are one of our favorite appetizer any time we visit Cheesecake factory - It is made with Fontina, parmesan cheeses, garlic and herbs in a wine sauce. It is an absolutely tasty way to enjoy the nutritious vegetable.

    These homemade ones differ from the restaurant, but made very easy and is a huge hit, every time I make them. They are the perfect creamy, cheesy mushroom bite with hints of spice, herbs, and green onions - Basically everything you want in a savory appetizer. 

    This is a very quick and easy recipe - Just stir filling together, fill and air fry! It is a great appetizer for the Christmas, Thanksgiving or any holidays or game day, just a snack for the family or a side dish for dinner, that can be enjoyed by everyone, since it is meatless -  BEST stuffed mushrooms recipe ever!

    No soggy mushrooms

    1. Don't soak them in water - Mushrooms are like a sponge that will absorb water. Wipe them with damp cloth or dry them thoroughly after washing them.
    2. No wet filling - Wet filling will add more moisture to the mushrooms when cooking them. We have added some panko breadcrumbs with the filling that will absorb the excess moisture.
    3. Air Fry instead of baking - Air frying tend to cook fast and less soggy due the hot air when compared to oven baking. Also, the perforations in the plate allows excess water to drip away from the mushrooms.
    4. Cook at higher temperature - This ensures the mushrooms are cooked without getting soggy.

    Cream Cheese Stuffed Mushrooms in Air Fryer

    Ingredients

    Mushrooms - We prefer the white button mushrooms or baby bella mushrooms for this recipe. Use medium sized ones.

    Cream cheese - We use Philadelphia cream cheese (use regular/low fat). It makes for an ultra creamy texture and helps keep all the filling together.

    Cheese - We used Mexican blend cheese which is a mix of 4 cheeses like Monterey Jack, cheddar, Asadero, Queso Quesadilla cheese.

    Spices - Italian seasoning, Garlic powder, Red pepper flakes, Salt and Black pepper.

    Scallions or Green onions.

    Method

    Make filling - Mix cream cheese with a spoon to loosen it up and then mix in shredded Mexican blend cheese, panko bread crumbs, spices, salt, pepper and chopped scallions.

    Fill mushrooms - Remove the stems from each mushroom and fill the cavity with creamy cream cheese filling, using two small spoons.

    Air Fry - Cook mushrooms at 385 degrees for about 8 minutes.

    Serve HOT!

    Expert tips

    What types of mushrooms should I use for this recipe?

    We prefer the white button mushrooms or baby bellas (also called Cremini). These types are the perfect bite size and cooks to perfection in the air fryer.

    White button mushrooms and cremini mushrooms actually come from the same species called agaricus bisporus. Cremini or baby bellas are firmer and more flavorful than the white button variety. They have an almost meaty flavor, which makes them irresistible.

    What size should I use?

    Choose mushrooms that are medium in size. Larger mushrooms will take longer to bake, whereas small mushrooms will not hold enough filling, which is the best part!

    Make sure to leave cream cheese at room temperature for several hours before making them.

    Cheese - We used shredded Mexican blend which is a 4 cheese blend of Monterey Jack, cheddar, Asadero, Queso Quesadilla cheeses.

    Can I use other types of cheese? Yes! If you don't have Mexican blend, then use a mix of cheddar and mozzarella.

    Can I use regular breadcrumbs? Yes! Use 3 tablespoons regular breadcrumbs instead of panko.

    This is a small batch recipe but can be easily doubled or tripled for a larger crowd. Make sure to air fry in batches without over crowding the pan.

    Do I have to grease the air fryer basket? Since mushrooms naturally have a lot of moisture in them, there is no need to spray the basket or the tops when air frying. They do not stick and there is very little mess.

    Important Note

    Depending on your air fryer, the mushrooms can fall sideways as you open or close. So make sure to close very gently so that they stay upright.

    Make it gluten free - Use gluten free panko instead.

    Double the recipe - Simply double the recipe and air fry in two batches.

    How to Clean Mushrooms? Do you need to wash mushrooms before stuffing them?

    Since mushrooms grow in dirt, they need to be thoroughly cleaned before stuffing. They are delicate, very porous, absorb water and get mushy during the cooking process.

    The best way to clean them is to wipe them with a damp paper towel to remove any loose dirt or to quickly rinse under cold running water, one at a time and wipe dry immediately using a clean kitchen towel.

    Make sure to wash mushrooms right before cooking them, not ahead of time.

    Air Fryer - We used Instant Vortex 6 quart air fryer. All air fryers tend to heat differently, so I recommend checking after about 6 minutes to be sure they are cooking nicely.

    How to serve?

    These are best enjoyed hot!

    1. Serve them as an appetizer or a small bite for parties, get together or family gatherings for holidays or just about anytime.
    2. Make it a side dish for dinner along with any main course like chicken, fish, shrimp, pasta, soups or rice dishes.

    How to store leftovers?

    These are highly addictive and don't be surprised if you don't have any leftovers! But if you happen to have a few leftover, they’ll keep just fine in the fridge.

    • To store: It will keep for 2 to 3 days in the fridge in an airtight container.
    • To reheat in microwave: When you’re ready to eat, just pop them in the microwave for 30 seconds to a minute.
    • To reheat in air fryer: Place refrigerated mushrooms in 350 degree pre heated air fryer, for about 4 to 6 minutes or until hot.
    • Freezing stuffed mushrooms is not recommended because of the high water and dairy content can make them soggy when thawed.

    How to make ahead?

    You can assemble them up to 12 hours before you plan to serve them. Just store in the fridge in an airtight container, then pop them in the air fryer right before you’re ready to eat. Add an extra 1 to 2 minutes, since they are cooked cold.

    How do you prevent stuffed mushrooms from getting soggy?

    If the filling is too soft or just made with only cream cheese, then it has a tendency to make them soggy. This recipe uses a filling, where the creaminess is balanced with panko which helps to absorb the excess moisture.

    Do you need to clean the mushrooms before cooking?

    Mushrooms grow in dirt and hence need to be thoroughly cleaned before cooking. Use a damp paper towel to gently wipe the surface clean.

    Why Are My Stuffed Mushrooms Watery?

    Ingredients

    Cream cheese filling

    • 4 ounces cream cheese room temperature
    • ½ cup shredded Mexican cheese blend
    • ¼ cup panko bread crumbs
    • 3 scallions finely chopped
    • ½ teaspoon Italian seasoning
    • ½ garlic powder
    • ¼ to ½ teaspoon red pepper flakes
    • ¼ teaspoon salt
    • ¼ teaspoon ground black pepper

    Additional ingredients

    • 11 to 12 medium size White or Baby bella mushrooms
    • Scallions chopped to garnish

    Instructions

    • Prepare mushroomsClean mushrooms and pat try with a kitchen towel. Gently twist the stem to remove from the mushroom caps.
    • Make filling
      Add room temperature cream cheese in a medium bowl and stir with a spoon to loosen it up. Add all remaining filling ingredients and stir until thoroughly combined.
    • Stuff mushrooms
      Using two small spoons, fill stuffing into the mushroom cavity, packing well inside and on top. Make sure to use all the filling!
    • Air Fry
      Pre heat air fryer at 385°F for 8 minutes. Place stuffed mushrooms in the basket (spacing evenly) and close VERY GENTLY to make sure the mushrooms stay stuffing side up.
    • Cook 6 to 8 minutes (smaller mushrooms might be done in 6 to 7 minutes, whereas medium sized ones will take 7 to 8 minutes), until the topping is nicely browned.
    • Serve hot!
