Overnight oats that tastes like Shrikhand!!!
TRULY. Prepare to be amazed.
Ah the convenience of cold overnight oats…
But, it’s no summer.
’tis the season for hot soups, warm blankets and cozy sweaters.
My mornings are still crazy.
Theoretically, I’d love to stir hot oatmeal every morning.
Ain’t happening. Not on weekdays.
A simple breakfast of overnight oats to the rescue.
A traditional sweet dish from the western region of India, shrikhand is made simply by straining yogurt and sweetening it with sugar.
I cheated and resorted to the convenience of greek yogurt (technically a strained yogurt).
Stir in some chopped pistachios or almonds, if you’d like some crunch.
Skill level – Easy
Shrikhand Overnight Oats
Ingredients:
1/2 cup old fashioned oats
1/2 cup + 2 tablespoons greek yogurt
1/4 cup + 3 tablespoons milk
3 tablespoons sugar
1/2 teaspoon cardamom powder
1 pinch salt
1 small pinch saffron, crushed with your fingertips
Preparation:
1. Combine all ingredients in a mason jar or container and stir well.
2. Cover and place in the refrigerator overnight (at least 6 hours and up to 2 days).
3. Uncover, stir well and enjoy.
Makes 1-2 servings
Notes:
Stir in some chopped pistachios or almonds, if you’d like some crunch.

I’ve never heard of shrikhand but if there’s cardamom in these oats then I know I’ll love them! They sound delicious!
