    Banana Nut Muffin Overnight Oats

    All the flavors of a banana nut muffin in your convenient overnight oats. Dairy free and vegan option.

    Overnight oats are the best! 

    Hot Summer days means cold-grab-and-go breakfasts.

    'Its sweet, creamy, hearty.

    Banana nut muffin, I mean, obviously.

    I promise. 

    Toast your oats....need to, got to, have to.

    Ingredients

    • 1 cup old fashioned oats
    • 1 tablespoon coconut oil
    • 1 large ripe banana, mashed 
    • 1 cup milk
    • 2 tablespoons walnuts, chopped
    • 1 tablespoon brown sugar (or more if needed)
    • ½ teaspoon ground cinnamon
    • 1 pinch salt
    Prevent your screen from going dark

    Instructions

    • Toast oats - Add coconut oil into a skillet and place over medium high heat. When hot, add oats and saute for 1 -2 minutes, until the color begins to change and you can smell toasted oats. out 8 hours ).
    • Transfer into a large mason jar or any container and stir all remaining ingredients (adjust sugar based on your desired sweetness). Seal jar and refrigerate for at least 6 hours or overnight.
    • Serve with additional chopped walnuts and sliced bananas.

    Notes

    Use a very ripe banana.

      I swear, toasted oats make almost everything more delicious (I always put them in my peanut butter cookies!) and I love the banana nut muffin flavor. Such pretty photos, too 🙂
