    Shrikhand Overnight Oats

    Overnight oats recipe that tastes like Shrikhand!!! A creative recipe mashup of Indian Shrikand and Overnight Oats recipe is like enjoying dessert for breakfast.

    It is another overnight oats!!

    You know Overnight Oats is perfect for summer. It is cold and no cooking involved, PERFECT.

    What is Shrikand?

    Shrikand is an Indian sweet dish made with strained yogurt, sugar and cardamom. It is thick, creamy and is a delicious treat during hot Summer days. Yogurt is strained for several hours, until most of the whey is drained off and results in a very thick yogurt.

    Greek yogurt is almost as thick as the drained yogurt and works as a great substitute for a shrikand. Not to to mention, it saves us several hours.

    Ingredients for making shrikand overnight oats:

    Greek yogurt - Thick creamy and make sure that it is plain variety.

    Oats - Old fashion oats as with all overnight oats recipe.

    Sugar - For that authentic taste.

    Spices - As with any authentic Indian desserts, saffron and cardamoms are the only way to go.

    How to make Oats shrikand with greek yogurt?

    Stir all ingredients, refrigerate and eat.

    That's why, overnight oats recipes are one of my go to breakfast in summer.

    Ingredients

    • ½ cup old fashioned oats
    • ½ cup + 2 tablespoons plain greek yogurt refer notes for using regular yogurt
    • ½ cup milk
    • 2 to 3 tablespoons sugar
    • ½ teaspoon cardamom powder
    • 1 pinch salt
    • 1 small pinch saffron crushed with your fingertips
    • Chopped almonds or pistachios optional
    Prevent your screen from going dark

    Instructions

    • Combine all ingredients (except nuts) in a mason jar or container and stir well.
    • Cover and place in the refrigerator overnight or at least 6 hours.
    • Stir once, garnish with chopped nuts (if using) and enjoy.

    Notes

    Sugar is what an authentic taste to shrikand. Please do nut substitute honey or maple syrup.
    Use plain greek yogurt and not flavored variety.
    If you do not have greek yogurt, then strain 1 cup of plain yogurt in a muslin cloth (several layers of cheesecloth) lined inside a strainer and placed over a bowl, for several hours (in the refrigerator). Measure ½ cup + 2 tablespoons for the recipe. For more detailed instructions on making greek yogurt from regular yogurt, check out "How to make greek yogurt"

      I've never heard of shrikhand but if there's cardamom in these oats then I know I'll love them! They sound delicious!
