    This is one of my favorite cauliflower recipes, and I make it all the time! The cauliflower florets bake up beautifully crispy and crunchy—the kind you can actually hear when you take a bite. I use a few simple tricks, including toasted panko breadcrumbs, to create an evenly golden, extra-crispy coating without deep frying.

    I first marinate the florets in a tangy, spicy buttermilk batter, inspired by the classic buttermilk fried chicken method. Then I add flour, cornstarch, and egg to the batter, creating a coating that helps the panko stick perfectly and bakes into a wonderfully crunchy crust.

    Finish it with a generous drizzle of creamy, sweet-and-spicy bang bang sauce, and it's completely irresistible. These crispy baked cauliflower bites are delicious as an appetizer or side dish, and they're also fantastic tucked into tacos with crunchy cabbage slaw and an extra drizzle of bang bang sauce.

    Toasted Panko for Superior Crunch and Color

    One simple trick makes a huge difference in this recipe: toasting the panko breadcrumbs before coating the cauliflower.

    If you simply coat the florets in plain panko and bake them, they'll still be good—but they won't have the same beautiful golden color or satisfying crunch. Some areas brown while others stay pale, and the coating never quite develops the crispy texture you get from deep frying.

    To solve this, I lightly toast the panko in a little oil before using it (the same technique I use in my air fryer chicken nuggets recipe). As the breadcrumbs toast, each flake gets coated in a thin layer of oil and turns a rich golden brown. This not only jump-starts the browning process in the oven but also creates a much crispier coating.

    The result is baked cauliflower that's evenly golden, wonderfully crunchy, and remarkably close to the texture of deep-fried cauliflower—without all the extra oil. It's a small extra step that's absolutely worth it.

    The secret to incredibly crispy baked cauliflower isn't just one ingredient—it's a combination of layers that work together to create a coating that's crunchy on the outside while keeping the cauliflower tender inside.

    It all starts with a thick buttermilk batter, which does more than add flavor. It creates a tacky surface that helps every layer of coating cling to the cauliflower. I also add egg, which acts like a natural glue, setting as it bakes to lock the coating in place so it doesn't flake off.

    Next comes the combination of cornstarch and flour. Cornstarch is the key to a crisp coating because it absorbs less moisture than flour and bakes into a light, brittle crust. The flour provides structure, creating a sturdy base that holds everything together.

    Finally, the cauliflower is coated in toasted panko breadcrumbs. Their light, airy texture creates lots of tiny crispy edges, while the pre-toasting gives them a beautiful golden color and an extra-crunchy finish that rivals deep-fried cauliflower.

    Together, these simple techniques create baked cauliflower that's irresistibly crispy, wonderfully crunchy, and packed with flavor. It's the kind of recipe you'll find yourself making again and again.

    Ingredients

    • 1 ½ cups panko bread crumbs
    • 2 tablepsoons vegetable oil
    • ½ medium cauliflower cut into 1 to 11/2 inch florets

    Marinade ingredients

    • ½ cup all pupose flour
    • ¼ cup cornstarch
    • ½ cup buttermilk
    • 1 large egg beaten lightly
    • 1 teaspoon salt
    • 1 teaspoon sriracha sauce
    • ½ teaspoon garlic powder

    Bang Bang sauce

    • ½ cup mayonnaise
    • 2 tablepsoons sweet chili sauce
    • 1 teaspoon sriracha sauce
    • ½ teaspoon garlic powder

    Instructions

    • Toast panko. Heat a medium skillet over medium-high heat. Once hot, add the panko and oil. Cook, stirring constantly, until the panko is evenly golden and toasted. Transfer the toasted panko to a bowl and let it cool slightly before proceeding.
    • Prep. Preheat oven to 400 degrees F. Grease a baking sheet with cooking spray and set aside. 
    • Marinade cauliflower. Stir all marinade ingredients in a medium bowl, until smooth and lump free. Add cauliflower pieces and toss around until every floret is well coated. 
      👉 If time allows, marinate for 30 minutes. Otherwise, continue with the recipe.
    • Finish and bake. Using a slotted spoon, lift one cauliflower floret from the marinade, letting any excess batter drip off. Coat it thoroughly with the panko breadcrumbs, gently pressing to help them adhere, then place it on the prepared baking sheet. Repeat with the remaining florets. Bake for 25–30 minutes, or until the coating is golden brown and crispy.
    • Make sauce. Stir all bang bang sauce ingredients together. Sauce can be made ahead and refrigerated for up to a day.
    • Serving suggestion. Drizzle the bang bang sauce over the cauliflower just before serving to keep the coating nice and crispy, or serve the sauce on the side for dipping.
      To make Bang Bang cauliflower tacos, fill warm corn tortillas with the crispy cauliflower, shredded cabbage, sliced jalapeños, fresh cilantro, and a generous drizzle of Bang Bang sauce. Enjoy!

    Freezing and reheating: Freeze the cooled cauliflower bites for up to a month.

    Can I cook the cauliflower in the air fryer?

    If you would rather use your air fryer for this recipe, you will still get crispy cauliflower. Follow the same instructions up to baking. Then, spray each coated cauliflower with cooking spray. Place a few into the basket of your pre heated air fryer, making sure not to overcrowd the basket. Air fry at 400°F for 10 minutes. And then, drizzle with bang bang sauce and enjoy!

    This is a vegetarian twist on the popular shrimp recipe, typically deep-fried. Instead of frying, the cauliflower is baked in the oven, achieving a wonderfully crispy exterior and makes an addictive snack similar to our deep fried cauliflower or the air fried buffalo cauliflower wings.

    It's served with a delicious bang bang sauce for dipping, similar to the air-fried bang bang chicken thighs.

        I baked these on convection bake on a wire rack @ 400 degrees for 25 min. I did spray them with olive oil before putting in the oven (not in recipe) but highly recommend. Crazy crunchy! In lieu of garlic powder in the bang bang sauce, I grated 2 garlic cloves (not in recipe). I ate the entire thing myself! Very, very, very good.

        You could sub greek yogurt but with compromises in flavor. I'd suggest greek yogurt + little sugar (to cut down the tartness) + sweet chili sauce + sriracha + garlic powder + water. Hope it helps:)

        Hi MK, Honestly, you can freeze cooked & cooled cauliflower and re heat them later (just like frozen chicken nuggets) with a little compromise to the texture. Hope it helps:)
