    What you'll need?

    Technically, there are only three main ingredients, plus an egg for the egg wash. The egg wash gives the pastry a beautiful golden-brown shine and acts as a glue, helping to seal the pastry and keep it in place as it bakes.

    Best brie for baked brie in puff pastry

    When you are buying brie there are two important things to consider. The size and ripeness.

    Size - You'll need an 8-ounce wheel of brie, but you can also opt for a larger one, like a 12 or 13-ounce wheel, which works equally well. Brie is typically available in the gourmet cheese section of most supermarkets.

    Ripeness - I prefer to use a firmer brie, as a soft brie will just ooze out like a volcano as soon as you cut into it.

    Puff pastry - You’ll need one sheet of puff pastry—I recommend using Pepperidge Farm. Just make sure to let it thaw at room temperature for 1 to 2 hours before using.

    Hot honey - I used my homemade hot honey recipe, which is incredibly easy to make with just two ingredients. However, if you’d prefer an alternative to hot honey, options like apricot jam, red pepper jelly, fig jam, or orange marmalade would be just as delicious.

    👩‍🍳 Don't remove the rind off brie before baking? No, there's no need to remove the rind of the brie before baking. The rind is completely edible and helps the cheese retain its shape as it melts, keeping it from oozing out of the puff pastry. Plus, it adds a nice texture and flavor contrast to the rich, creamy interior.

    👩‍🍳 Chill the wrapped brie before baking—this step is crucial. Keeping the cheese cold helps it melt gradually during baking, giving you a gooey center without it oozing out too soon. Additionally, chilling the puff pastry ensures it firms up, allowing it to bake into those perfect, flaky layers.

    Step 7 - Brush the outside of the pastry with egg wash to achieve a shiny, golden finish. Then, bake in a preheated 425°F oven until the pastry is golden and crisp.

    Once you remove the baked brie from the oven, drizzle 2 to 4 tablespoons of hot honey over the top. The pastry edges will form a natural dam, helping the honey stay in place. The warm brie will gently melt the honey, creating a deliciously gooey topping.

Refer the goat cheese crostini or tandoori chickpeas crostini, on how to make them. These crunchy toasts make the perfect sturdy base for scooping up the melted brie.
    • Crackers - Sturdy crackers, such as water crackers or whole grain crackers, work wonderfully. Choose something neutral to let the brie and its toppings shine. Avoid wafer-thin crackers, as they’re too delicate to support the rich, melted cheese.
    • Fruits - Fresh fruits perfectly balance the richness of the brie, adding a sweet, refreshing crunch. They make a delicious pairing with the cheese. Try grapes, sliced apples, pears, persimmons, or figs for a variety of flavors.

    Ingredients

    • 1 sheet puff pastry thawed
    • 8 ounces round Brie cheese
    • 1 egg
    • ¼ cup hot honey or more as needed

    Instructions

    • Thaw the puff pastry sheet. You can let it sit at room temperature for 1 to 2 until it is softened. Roll puff pastry out slightly.
    • Cut an 8 to 9 inch circle. Refer to notes on ways to use the scraps.
    • Place the cheese wheel (rind on) in the center of the pastry circle. Then, brush the edges with egg wash.
      To make egg wash - Beat an egg with a teaspoon of water.
    • Fold the edges of the puff pastry around the brie, creating pleats and pressing them to seal the pastry onto itself. (Refer step-by-photos).
    • Place the prepared brie on a parchment-lined baking sheet and chill in the fridge for at least 30 minutes to firm up both the puff pastry and the cheese.
    • When you are ready to bake, preheat oven to 425°F. Brush the outside of the pastry with egg wash and bake for 20 to 25 minutes, or golden brown in color.
    • Remove the brie from the oven and transfer the baking sheet to a wire rack to cool. Drizzle 2 to 4 tablespoons of hot honey over the top. The pastry edges will form a natural dam to keep the honey in place. Allow it to cool for at least 20 minutes before serving.
    • Serve with your favorite crackers, toasted baguette slices, sliced apples, pears, persimmon, grapes or figs.

    Notes

    You'll need an 8-ounce wheel of brie, but you can also opt for a larger one, like a 12 or 13-ounce wheel, which works equally well.  Just make sure to cut a large pastry circle. 
    Use firm brie. 
    Alternatives to hot honey - Apricot jam, red pepper jelly, fig jam, or orange marmalade would be just as delicious.
    Way to use puff pastry scrap is to cut it into small squares or strips, brush with olive oil and sprinkle with sea salt or cinnamon sugar. Bake at 375°F (190°C) until golden and crispy.
