- Cheese - Although blue cheese is a classic when it comes to buffalo chicken wings, there are several folks who are not a fan of blue cheese. So, I used a mix of cheddar and mozzarella cheeses. - Scallion - Adds a mild onion flavor and a pop of green color.

- Chicken - We used rotisserie chicken, avoiding the use of the skin to prevent excess salt. Chop the chicken into small pieces or shred it using two forks. Personally, I prefer using rotisserie chicken from Costco.
- Best hot sauce to use? Hands down, Frank’s RedHot Sauce!
- Adjust spiciness - While you have the option to decrease the amount of Frank's RedHot sauce when serving it to kids, I strongly recommend against it, as this recipe is not overly spicy.
- Jalapenos are optional - It enhances the presentation, providing additional texture and flavor. If you prefer a milder taste, consider removing the seeds.
- Feed a larger crowd - Double the recipe and bake in a 10-inch cast iron skillet.
