Red Velvet Mug Cake
Ultra soft and light cake, single serving, no egg red velvet is certainly one of our favorite mug cake recipes that turn to again and again. It is unbelievably good! The buttermilk, sweet vanilla along with a bit of cocoa makes it taste like a vanilla cake with mild cocoa flavor along with a hint of tanginess.

Greek Yogurt instead of Cream cheese
Red velvet cake traditionally is made with cream cheese frosting. Since, we are a making small single serving cake, in under 2 minutes, opening up a package of cream cheese to use just a tablespoon didn't sound like a good option. So, we tried substituting greek yogurt and was very happy with the result. It gives the same taste as cream cheese frosting but more practical.
Red food coloring
It comes in two varieties - gel and liquid. We highly suggest using only gel since the amount of liquid food coloring that needs to be added to obtain the deep red color will add additional liquid to the recipe and alter the dry to liquid ratio.
Can I skip food color?
Absolutely! This recipe is just as delicious without the food coloring.
Is red velvet cake just a chocolate cake?
Though both have cocoa powder as a key ingredient, red velvet contains a very small portion of cocoa powder when compared to chocolate variety. Also, red velvet cake has an iconic velvety texture that is due to the addition of vinegar with buttermilk when compared to chocolate that is more traditional.
Serve HOT
As with all microwave cake, they tend to dry out upon cooling. So, we recommend eating this right away.

Standard mug cake ingredients: Flour, sugar, baking powder, milk, vegetable oil and vanilla extract
Add-ins: Red food coloring, Cocoa powder and the secret ingredient white vinegar.
Pro tips for success
- This dessert cooks for a shorter time when compared to other mug cake recipes due to the addition of vinegar. Don't be gravitated to cook longer.
- White distilled vinegar is flavorless, so please stay away from other vinegars like apple cider vinegar, rice vinegar, wine vinegar or other types.
- Stir batter until lump-free – Using a spoon, stir the batter until smooth and no lumps remain.
- Microwaves differ – This recipe was tested in two different microwaves and it took 70 seconds in one and 80 seconds in the other.
- Best eaten hot – Enjoy this dessert HOT! As with mug cakes, some might dry out a little when left at room temperature.
- Use only GEL red food coloring and NOT LIQUID.
- Food Coloring - The amount of red food coloring is up to you. I tested with varying amounts, to get the dark red color you see here, use about ¼ teaspoon gel food coloring.
How to make?
Stir milk, vegetable oil, red food coloring, vanilla extract and white vinegar together in a microwave safe coffee mug. Stir in flour, sugar, cocoa powder, baking powder and salt, until smooth and lump free.
Cook in microwave for 70 to 80 seconds. In the mean time, stir together some greek yogurt and sugar together.
Serve hot with sweetened greek yogurt.
How to serve?
Enjoy it hot as soon as you remove from the microwave with big scoop of sweetened greek yogurt. Some recipes (depending on the type of microwave used) might get a little dry if left at room temperature for a long period of time.

Ingredients
Wet ingredients
- 3 tablespoons milk
- 3 tablespoons vegetable oil
- ½ teaspoon vanilla extract
- ½ teaspoon distilled white vinegar
- ⅛ teaspoon red gel food color (do not use liquid color)
Dry ingredients
- ¼ cup all purpose flour
- 3 tablespoons sugar
- 1 teaspoon cocoa powder
- ¼ teaspoon baking powder
- 1 pinch salt
Topping
- 2 tablespoons plain greek yogurt
- 1 to 2 teaspoons sugar
Instructions
1. Add all wet ingredients into a microwave safe mug and stir well.
2. Stir in all dry ingredients until smooth and lump free.
3. Microwave for 70 to 80 seconds DO NOT OPEN THE MICROWAVE IN BETWEEN.
