Slicing each chicken breast into two cutlets also helps release sticky proteins from the meat. Combined with the proteins in the egg and flour, they act like a natural glue, helping the crispy coating adhere while giving the chicken a substantial, crunchy crust.

- Press the breadcrumbs well – Use your hands or tongs to firmly press the breadcrumb mixture onto the chicken cutlets. This helps the coating adhere better and gives you a thicker, crispier crust.
- Make it gluten-free – Use gluten-free flour and gluten-free panko breadcrumbs.
- Panko breadcrumbs – Panko gives you the crispiest coating, but if you don’t have any on hand, you can use plain breadcrumbs or Italian-seasoned breadcrumbs instead.
- Parmesan – Use finely shredded Parmesan so it blends evenly with the panko and has a similar size and texture. If you’re using pre-shredded Parmesan, pulse it in a mini food processor for a few seconds before adding it to the breadcrumb mixture.

For the best air fryer chicken parmesan, I recommend using boneless, skinless chicken breasts sliced horizontally into thin, even cutlets. You can also use pre-cut chicken cutlets if you want to save a step.
Whole chicken breasts are simply too thick and uneven for this recipe. The tapered end is much thinner than the center, so by the time the thickest part is cooked through, the thinner edges can become dry or overcooked. Thin cutlets cook faster and more evenly, giving you juicy chicken with a beautifully crisp coating.
There’s another bonus: thinner cutlets give you a better breading-to-chicken ratio, which means more of that crispy, golden coating in every bite!
Prefer dark meat? You can use boneless, skinless chicken thighs instead. Since thighs are often uneven in thickness, gently pound them to an even thickness before breading so they cook evenly in the air fryer.
Slicing the chicken breast into thin, even cutlets is one of the most important steps. Whole chicken breasts are naturally thicker in the center and taper toward the ends, so the thinner parts can dry out and the breading can become too brown before the thickest part is fully cooked.
Cutting the breast horizontally creates evenly thick pieces that cook at roughly the same rate. This keeps the chicken juicy while the breadcrumb coating has enough time to become golden and crisp without over-browning.
Thin cutlets also give the breadcrumbs more surface area to cling to, so you get a generous layer of crispy coating in every bite. They cook quickly too—usually in about 8 to 12 minutes in the air fryer, depending on thickness—making it easier to get juicy chicken without overcooking it.
The most common reason the breading falls off is that the chicken is too wet or the breadcrumbs aren’t pressed on firmly enough. Before dipping the chicken into the egg batter, pat the cutlets thoroughly dry with paper towels. Excess moisture can make it harder for the coating to adhere and can cause it to separate from the chicken as it cooks.
Since this recipe skips the traditional flour step, coat the chicken evenly in the egg batter, then immediately dredge it in the breadcrumbs. Press the breadcrumbs firmly onto both sides, so they form a good, even coating.
Also, don't move the chicken around too much once it’s in the air fryer. Let the crust cook and set before handling the cutlets, and avoid overcrowding the basket, which can cause the breading to rub against other pieces and come off.
I recommend using about 2 to 4 tablespoons of marinara per chicken cutlet. If you want to keep the coating extra crispy, stick closer to 2 tablespoons and spread it in a thin strip down the center of the cutlet. Leave the outer edges uncovered so they stay golden and crunchy.
If you prefer a saucier chicken parmesan, spoon extra marinara onto the plate underneath the chicken or serve it on the side for dipping. Adding too much sauce directly onto the crispy coating can make it soggy, so for the best texture, serve the chicken right away.

- 2 boneless skinless chicken breasts (about 9 ounces each)
- 2 large eggs
- 2 ½ tablespoons all purpose flour
- ½ teaspoon garlic powder

- ¼ teaspoon ground black pepper
- 1 ½ cups panko breadcrumbs
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- ¾ to 1 cup marinara sauce
- 1 to 2 cups shredded mozzarella cheese
Instructions
- Make cutlets. Pat the chicken breasts dry with paper towels. Trim off any excess fat, then slice each breast in half lengthwise to make 4 evenly sized cutlets.
- Make batter. Add 2 eggs, 2 1./2 tablespoon flour, ½ teaspoon garlic powder, ½ teaspoon salt and ¼ teaspoon black pepper into a shallow dish and whisk until smooth.
- Mix panko. In another shallow dish (or a large rimmed plate), add 1 ½ cups panko, ½ cup parmesan and 1 teaspoon Italian seasoning. Stir to combine.
- Dredge. Dip each chicken cutlet into the wet batter, turning to coat both sides. Then dredge in the breadcrumb mixture, pressing gently but firmly so the crumbs stick. Repeat with the remaining chicken and place the cutlets on a large plate.
- Air fry. Preheat the air fryer to 380°F. Once hot, arrange the breaded chicken cutlets in a single layer, and don't overcrowd the basket. Cook in 2 batches if needed. Lightly spray the cutlets with cooking spray and air fry for 8 minutes. You don't need to flip the cutlets.👉 For an extra golden and crispy crust, I like to spray the chicken with a little more cooking spray halfway through cooking.
- Finish. After 8 minutes, top each chicken cutlet with marinara sauce, then sprinkle with as much mozzarella cheese as you like. Close the air fryer and cook for another 2 to 3 minutes, or until the cheese is melted and the chicken is cooked through, reaching an internal temperature of 165°F.
- Serve. Serve hot with cooked pasta or crusty bread.

5. Place breaded cutlets in a pre heated 380 degree air fryer and cook for about 8 minutes.
Tip: Don't overcrowd your basket. Place in a single layer, two cutlets at a time. and leave a little space around for the air to circulate, so the breading can brown evenly, without steaming.
6. Open basket, spread marinara sauce on top and then top with shredded mozzarella cheese and continue cooking for an additional 2 to 3 minutes, to melt cheese.

How to Reheat Air Fryer Chicken Parmesan
The air fryer is the best way to reheat chicken parmesan while bringing the crispy coating back without drying out the chicken. Reheat it at 350°F for about 3 to 5 minutes, or until the cheese is melted and the edges are crisp.
I don’t recommend using the microwave if you want to keep the breading crispy. The trapped steam softens the coating and can leave it soggy.
How to reheat it
- Preheat your air fryer to 350°F.
- Place the chicken parmesan in a single layer, without overlapping, so the hot air can circulate around each cutlet.
- Air fry for 3 to 5 minutes, checking around the 3-minute mark. It should be heated through, with melted cheese and crisp edges.
Tips for the best results
Keep extra marinara on the side – If the chicken has already absorbed some of the sauce, don’t add more before reheating. Warm the extra marinara separately and spoon it over the chicken just before serving so the crispy coating stays crisp.
Add fresh cheese – If the mozzarella looks a little dry after refrigeration, add a small amount of fresh mozzarella during the last minute of reheating.
