Healthy Waffles Recipe
Happy 2021 – Kickstarting the new year with a healthy waffle recipe!!! After all the cookies and sweets, I could use some healthy eating. If you feel the same way or if you are just looking for healthy breakfast waffles, then these are for you.
This recipe is a slight modification to our popular Gluten free oatmeal waffles. So, you know it’s gonna be good! It’s crisp, light, easy, naturally gluten free, no butter, no sugar, no oil and freezer friendly.
We love blender waffles because you just add the ingredients to a blender and let it do its thing. Then you only have your blender to clean afterward too. Pour the batter on to a waffle iron and you are on your way to make a healthy breakfast.
What type of blender to use?
You don’t need a professional $$$ blender. Add all ingredients into any blender and blend until smooth (I have tried making half the recipe in my Nutri Bullet and Vitamix with great success).
Pro Tips for Success
Select very ripe banana for natural sweetness.
Use only old fashioned oats and NOT quick cooking or steel cuts.
The batter tends to thicken as it sits, so your last batch of waffles might be not so light as the first batch. You could stir in couple of tablespoons water for the last batch, if the batter looks too thick.
Cook waffles until they get a deep golden brown for GUARANTEED CRISPNESS! It took 5 to 6 minutes in my waffle iron.
Blender – We hav tried this recipe in Vitamix and Nutri bullet with success.
Use gluten free oats to make gluten free waffles.
Variations
- Chocolate chips – Add dark chocolate chips towards the end into the blender, blend for a few seconds (not any longer).
- Spices – Mix in your favorite ground spices like nutmeg, cardamom, ginger, pumpkin spice or apple spice.
- Almond – Mix almond extract and sliced almonds during the last few seconds of blending.
- Nuts – Stir in chopped walnuts, pecans or toasted hazelnuts.
- Nut Butter – Swirl in peanut or almond butter into the batter.
- Coconut – Stir in shredded coconut.
Key Ingredients
Oats – Old fashioned oats and not quick cooking or instant. Use gluten free oats to make gluten free waffles.
Almond butter – Use creamy almond butter (or peanut butter)
Banana – Ripe banana for natural sweetness
Eggs – Cold or room temperature
Milk – Whole or reduced fat preferably
Baking powder, cinnamon and salt – Flavoring and leavening.

How to make healthy homemade waffles?
Add oats, milk, eggs, almond butter, baking powder, cinnamon and salt into a blender and blend until smooth. Make waffles according to your waffle maker instructions.

I usually make a double batch of this recipe, place cooled waffles in a ziplock bag and freeze for several weeks. My favorite way to re heat them is to pop one or two in a bread toaster, until hot and crisp. Great for weekday mornings!

- 3 cups old fashioned oats
- 4 large eggs
- 2 ripe bananas (medium to large), about 1 cup mashed
- 1 cup milk
- 1/2 cup almond butter (or peanut butter)
- 3 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt

Instructions
1. Pre heat waffle iron according to manufactures instructions.
2. In the mean time, add all ingredients into a blender and blend until smooth (it took about 2 minutes in my blender).
3. Pour about 1/3 cup batter into each waffle plate and cook according to manufactures instructions until deep golden brown. (I cooked for 5 minutes in my waffle iron - cooking it shorter than that will yield a more beautiful golden color but does not crisp up)
4. Remove waffles onto a plate and repeat with remaining batter. (The batter tends to thicken as it sits, so your last batch of waffles might be not so light as the first batch. You could stir in 2 to 4 tablespoons water or milk for the last batch, if the batter looks too thick).
Serve hot with maple syrup.
