    Looking for an easy, no-bake, and healthy Halloween treat? These adorable pumpkin bites are made with wholesome ingredients like almond flour, almond butter, and maple syrup, and come together in minutes—no oven needed!

    I use the same almond flour chocolate dough from my no-bake brownie bites and chocolate mice, then shape it into mini pumpkins and add a broken pretzel piece for the stem. The dough has a playdough-like texture, making this a fun hands-on activity for kids to shape their own little pumpkins.

    They’re naturally gluten-free, with an easy vegan option, so everyone can enjoy a festive Halloween treat!

    Ingredients you'll need

    1. Almond flour – Use super-fine almond flour and not almond meal as in all our almond flour recipes.
    2. Almond butter – Other nut butters like peanut butter or sun butter can be used instead. Make sure that it's the creamy kind.
    3. Cocoa powder – Dutch process cocoa powder is recommended for all cocoa powder recipes.
    4. Maple syrup - Makes it healthier and adds enough liquid to help with binding.
    5. Chocolate chips - Use semi-sweet chocolate chips for the right balance of sweetness.
    6. Pretzels – A broken part of a pretzel is used to make stems like in gingerbread cookie cups.

    How to make Halloween pumpkins?

    You can find full printable recipe below, but here is a quick overview of the procedure along with step-by-step photos.

    1. Add almond butter, maple syrup and chocolate chips into a microwave safe bowl.
    2. Microwave until melted and smooth.
    3. Add almond flour, cocoa powder and salt.
    4. Knead to form a soft dough, like in date balls.

    Tip: If the dough feels very soft then let it rest at room temperature for a few minutes to firm up.

    7 to 10. Using a toothpick, make eight indentations to form the shape of a pumpkin. Break a pretzel stick into thirds and insert it to resemble stems.

    Tips For Success

    • Use super fine almond flour and not almond meal.
    • If dough feels too soft to roll, then leave aside for 10 to 20 minutes at room temperature to firm up.
    • To make it gluten free, use gluten free pretzels
    • Use peanut butter instead of almond butter.

    Ingredients

    • ½ cup creamy almond butter or use peanut butter
    • ½ cup maple syrup
    • ½ cup semi sweet chocolate chips
    • ¾ cup almond flour
    • 6 tablespoons cocoa powder
    • 2 pinches salt
    • 6 pretzel sticks

    Instructions

    • Make dough. Add ½ cup almond butter, ½ cup maple syrup and ½ cup chocolate chips into a medium microwave-safe bowl. Melt for about 1 minute or until very hot. Remove from the microwave and mix until it becomes smooth.
    • Finish dough. Add ¾ cup almond flour, 6 tablespoon cocoa powder and 2 pinches salt. Stir well to make a smooth and shiny dough.
      👉 If the dough feels very soft, then let it rest at room temperature for 10 to 30 minutes to firm up.
    • Roll into ball. Scoop a heaping tablespoon of dough and roll it into a smooth ball, making sure there are no cracks. If the dough cracks, gently knead it in your hands 3 to 4 times, then roll it again. The warmth from your hands will help soften the dough and bring it together.
    • Shape. Using a rounded toothpick, make 6 evenly spaced indentations around the ball to create a pumpkin shape. Refer to the photos or video for guidance. Break a pretzel into thirds and insert one piece into the center as the pumpkin stem.

    • Storage. Store the pumpkins in the refrigerator. Let them sit at room temperature for at least 30 minutes before serving so they soften slightly.

    Notes

    Use super fine almond flour and not almond meal.
    Microwave liquid mixture until it gets hot and not boiling. Remove from microwave and stir, until chocolate chips is melted.
    If dough feels too soft to roll, then leave aside for 10 to 20 minutes at room temperature to firm up.
