    What is almond flour?

It is a flour made from finely ground blanched, which gives it a finer texture compared to almond meal, which is made from almonds with the skins intact and has a coarser texture.

Almond flour is widely used in baking and cooking, especially in gluten-free and grain-free recipes. It boasts a nutty flavor, moist texture, and adds richness, especially in dessert recipes and comes in handy for fall baking.

Can I substitute almond flour for regular flour in recipes?

Almond flour is often used instead of wheat flour, but it acts differently because it doesn't have gluten. Recipes usually need additonal ingredients like eggs or xanthan gum to bind everything together. It's great for gluten-free baking and gives a nutty taste.

Because of its texture, baked goods with almond flour are denser and moister, like the almond flour chocolate cake, so you might need to alter the recipe. And because almond flour tastes nutty, it can affect the taste compared to regular flour.

How to make almond flour at home?

To make almond flour at home, start by blanching the raw almonds to remove the skins. Simply pour boiling water over the almonds, let them sit for about 10 minutes, then drain and rub off the skins with your hands.

Next, let the blanched almonds dry completely on a kitchen towel for a few hours. Once dry, place the almonds in a food processor or high-speed blender. Pulse in short bursts, scraping down the sides as needed. Be careful not to over-process, as it may turn into almond butter. Continue until the almonds form a fine flour.

Once ground, sift the flour through a fine-mesh strainer to remove any larger pieces. Transfer the fine almond flour to an airtight container and store it in the refrigerator or freezer to keep it fresh for longer. Check out more desserts made using almond flour.

      How to store almond flour?

While almond flour can be stored in an airtight container in a cool, dry pantry, I find it best to store mine in the refrigerator for an extended shelf life. For even longer storage, you can freeze it.

What's the difference between almond meal and almond flour?

Almond flour is typically made from almonds without the skins, also known as blanched almonds and has a finer texture, while almond meal is made from almonds with the skins and has a coarser texture. They can often be used interchangeably, but almond flour is preferred for finer baked goods.
