    Aren’t these chocolate mice the cutest little Halloween snack? These adorable mice are made with wholesome ingredients like almond flour, almond butter, and maple syrup, and come together in minutes—no oven needed!

    I use the same almond flour chocolate dough from my no-bake brownie bites and chocolate pumpkins, then shape it into mice. The dough has a playdough-like texture, making this a fun hands-on activity for kids to shape their own little mice.

    They’re naturally gluten-free, with an easy vegan option, so everyone can enjoy a festive Halloween treat!

    Ingredients you'll need

    • Almond Flour: Use super-fine almond flour instead of almond meal, as the finer texture creates a smoother, melt-in-your-mouth feel that's perfect for these chocolate mice.
    • Almond Butter: Choose a creamy almond butter (or peanut butter) to help bind the mixture and give it a nutty flavor.
    • Cocoa Powder: Dutch-processed cocoa powder is best for no-bake recipes since it has a smooth, mellow flavor and lacks the acidity of natural cocoa. I explain more in the round up post cocoa powder recipes.
    • Maple Syrup: Maple syrup adds a subtle, natural sweetness while keeping the treat refined sugar-free and a bit healthier.
    • Chocolate Chips: Semi-sweet chocolate chips offer the ideal balance of sweetness and color—use vegan chocolate chips if you want to keep the recipe vegan.
    • Pumpkin Seeds: Raw pumpkin seeds make the perfect little "ears" for the mice and add a fun, crunchy touch.
    • Sesame Seeds: White sesame seeds add just the right contrast and detail to create the mouse "eyes."
    • Pretzel Twists: Use regular or thin pretzel twists for the tails—they’re easy to insert and add a salty-sweet crunch.

    How to Shape the Chocolate Mice

    Divide the dough into six portions. Roll each into a smooth ball, then shape it into an egg and pinch one end to create a pointed "nose" — this forms the mouse body.

    Tails - Insert a pretzel into the rounded end of each mouse to form the tail.
    Eyes - Use a damp finger to place two sesame seeds — they’ll stick easily.
    Ears - Gently insert two damp pumpkin seeds into the top of the mouse.

    Ingredients

    To make the body

    • ¼ cup creamy almond butter (or peanut butter)
    • ¼ cup maple syrup
    • ¼ cup semi sweet chocolate chips
    • ¼ cup + 2 tablespoons almond flour
    • 3 tablespoons cocoa powder
    • 1 pinch salt

    For the rest

    • 12 pumpkin seeds (or use small sliced almonds)
    • 12 white sesame seeds
    • 6 pretzel twists

    Instructions

    Make mice body

    • Melt. In a medium microwave-safe bowl, combine ¼ cup almond butter, ¼ cup maple syrup, and ¼ cup chocolate chips. Microwave for about 45 seconds or until very hot, then stir until the mixture is completely smooth.
    • Finish dough. Add the 6 tablespoon almond flour, 3 tablespoon cocoa powder, and 1 pinch salt. Mix well until a dough forms — I like to use my hands to bring it together smoothly.
      👉 Check the texture: The dough should be soft but hold its shape without cracking.– If it’s too soft, add a little more almond flour and knead.– If it’s too firm, mix in a few drops of water and knead again.

    Shape the mice

    • Shape body. Divide the dough into 6 equal portions. Roll each into a smooth ball, then shape it into an oval. Pinch one end to create a pointed "nose" — this forms the mouse body. (See photos for reference.)
    • Tails. Insert a broken pretzel into the rounded end of each mouse to form the tail.
      👉 Pour a little water into a small bowl — you'll use it to help the eyes and ears stick to the mice.
      Eyes. Lightly moisten your fingertip with some water and dab the spot where the eyes will go. Use the damp finger to place two sesame seeds — they’ll stick easily.
      Ears. Dampen two pumpkin seeds and blot off excess water. Gently press them into the top of the mouse to make ears.
    • Serve. Let the chocolate mice sit at room temperature for a few hours or overnight to firm up.

    Notes

    Fix dough texture: Add more almond flour if too soft, or a few drops of water if too firm.
    Adjust sweetness: Adjust the maple syrup and cocoa powder to suit your taste.
    Storage: Keep in an airtight container for 2 days at room temperature or up to a week in the fridge. Let them come to room temperature before serving.

      Totally healthy!! Chocolate is good for you anyways! These are super cute....I just want to bite into one. I wonder if I could sub the almond flour for coconut flour?? I might have to try 🙂
