    These no bake brownie bites are not a brand new recipe! It is simple version of the dough I used to make adorable chocolate mice for Halloween or also the Halloween pumpkins.

    • Almond Butter - Use creamy almond butter for a smooth texture in the no bake brownie bites.
    • Almond flour - Super fine flour is always recommended for the fine consistency.
    • Maple syrup - It serves not only to sweeten the no bake brownie bites but also to bind all the dry ingredients together.
    • Chocolate chips - I prefer Ghiradelli semi-sweet chocolate chips. Nestlé semi-sweet chips are slightly sweeter, so you may need to reduce the amount of maple syrup accordingly.
    • Cocoa powder - I used Hershey's unsweetened cocoa in the no bake brownie bites recipe.
    • Salt - Salt offsets the sweetness and makes the flavors pop.

    Substitutions & Variations

    • Avoid using almond meal instead, as it creates a slightly heartier texture rather than the fudgy brownie texture we aim for.
    • Use peanut butter instead of almond butter.
    • Replace maple syrup with honey.
    • Make it vegan by using vegan chocolate chips.

    Step 2 - Melt in a microwave until mostly melted. Remove and keep mixing until fully melted.

    How to store?

    These healthy no-bake brownie bites stay fresh for 3 to 4 days at room temperature, up to 2 weeks in the refrigerator, or for a month in the freezer. However, these balls are so delicious that they likely won't last that long!

    Helpful tips

    • Use creamy almond butter and not crunchy.
    • If the no bake brownie bites dough feels too soft to roll, let it sit at room temperature for 10 to 20 minutes to firm up.

    Ingredients

    Wet ingredients

    • ¼ cup creamy almond butter or use peanut butter
    • ¼ cup maple syrup
    • ¼ cup semi sweet chocolate chips

    Dry ingredients

    • ¼ cup + 2 tablespoons almond flour super fine
    • 3 tablespoons cocoa powder
    • 1 pinch salt
    Prevent your screen from going dark

    Instructions

    • Add all wet ingredients into a medium microwave safe bowl. Melt for about 40 to 60 seconds or very hot.
    • Remove from microwave and stir well, until chocolate chips melts and becomes a smooth mixture. 
    • Add all dry ingredients, stir well to make a make a smooth dough.
    • Roll dough into small bite size balls. If the dough feels too soft or sticky to work with, then leave aside at room temperature for a few minutes to thicken and firm up.
    • Let brownie bites cool completely, before storing. They will continue to firm up even more as it cools.

    Notes

    Use super fine almond flour and not almond meal.
    Microwave liquid mixture until it gets hot and not boiling. Remove from microwave and stir, until chocolate chips is melted.
    If dough feels too soft to roll, then leave aside for 10 to 20 minutes at room temperature to firm up.
